Quick-Baking Gluten Free Au Gratin Potatoes

First, I can’t tell you how much we enjoyed these au gratin potatoes. They are the best I’ve ever had. Every time I’m craving them, however, I usually don’t have over an hour to wait for them to bake. This recipe only takes 30 minutes to cook! They’re fast and better tasting! It can’t get any better than that! Enjoy.

Quick-Baking Au Gratin Potatoes

Yield: Makes 4 - 6 servings

Quick-Baking Au Gratin Potatoes

The most flavorful and creamiest au gratin potatoes you'll ever have. Plus, they cook in just 30 minutes!

Ingredients:

  • 2-1/2 tablespoons butter
  • 1/2 large garlic clove
  • 2-1/4 pounds potatoes golden yukon (or russet), sliced to 1/8-inch thick
  • 4 - 6 ounces Smoked Gouda Cheese (or your favorite* cheese), shredded
  • Salt & white pepper (or black), to taste
  • 1-1/2 to 1-2/3 cup heavy whipping cream (or full-fat coconut milk)
  • 1/2 cup + 2 tablespoons water
  • 4 large bay leaves
  • 3 tablespoons freshly grated Parmesan cheese (or Kraft canister)

Instructions:

  1. Preheat the oven to 425ºF with a shelf situated in the upper third.
  2. Melt 1-1/2 tablespoons of butter in a heavy skillet over medium-high heat. Rub the wide portion of the garlic on the bottom of the pan to flavor the butter. Alternatively, butter the bottom of a casserole dish.
  3. Add half of the potatoes, season with salt and pepper, sprinkle with half of the cheese. Repeat with the remaining half of potatoes and cheese.
  4. If using a casserole dish, heat the water and coconut milk together in a sauce pan or microwave. Pour the cream and water mixture on top and simmer for 5 minutes if using a skillet.
  5. Distribute and bur the bay leaves under the cream snd/or potatoes.
  6. Sprinkle the top with Parmesan cheese and bake for 25 minutes when using the stovetop method or 40 -50 minutes when using a casserole dish. Cover with foil once it browns to your liking. Once the potatoes are tender, they are done. However, you can bake it longer to remove some of the liquid or until it reaches your desired consistency.
  7. Remove from the oven, remove and discard bay leaves, and allow to rest 10 minutes prior to serving.

Tips

*If not using smoked cheese, add sprinkle on some smoked paprika. The smokey flavor is incredible!
