Gluten Free Cannoli Pancakes

Cannoli is an Italian dessert, tubes of crisp pastry, filled with sweetened ricotta cheese. Ricotta makes the most incredible pancakes. Also sweetened with sugar, these gluten free ricotta pancakes may be made extra-fluffy or traditional. Top them with a fruit puree or pure maple syrup. (Some traditional syrups contain gluten.) Serve your gluten free cannoli pancakes for breakfast or brunch. Your guests will not only be impressed, but they’ll be trying to guess the ingredients. Flan Using Evaporated Milk Only

I made this flan recipe on Cinco de Mayo. It is a Mexican and Spanish tradition, though you may find some slight differences in recipes. It is naturally gluten free. This is my personal version which omits sweetened condensed milk. I find it too sweet. You can easily make flan using evaporated milk only and control the amount of sugar you add. This gluten free sopapillas recipe turned out amazing! They are crunchy on the outside and a bit chewy on the inside. I enjoy them more than the gluten sopapillas. The secret? Buttermilk! Using buttermilk creates crispy pillows of goodness.. (I got this idea from Gluten Free Indian Fry Bread Recipe. If you do not wish them to be chewy, use the Indian fry bread recipe. Avocado anything is terrific in my book, but this avocado buttermilk soup is just fantastic. If you’re fortunate enough to live in the San Francisco Bay Area, then you should make this before the end of the Dungenuss crab season, between June and July. Even in Central California, we have access to some. Of course you can make this soup without the crab salad in the center. You can make a chopped vegetable salsa instead. Enjoy!
