Gluten Free Banana Bread Using Yellow Cake Mix

The perfect gluten free banana bread recipe using a homemade gluten free yellow cake mix.

Ingredients:

Instructions:

  1. Preheat oven to 350°F. Oil the bottom of a 9 x 5-inch loaf pan.
  2. Add the bananas and butter to the bowl of your mixer. Beat on medium speed until blended.
  3. Add eggs and beat until creamy.
  4. Add cake mix and beat on medium speed, just until blended. (Over-mixing will create the bread to over-rise and then fall.)
  5. Pour into prepared pan; and bake for 55 to 60 minutes or until a toothpick or skewer inserted in center comes out clean. Tent the top with foil once it reaches your desired color of brown.
  6. Once baked, transfer the pound cake in the pan to a cooling rack to cool for 10 minutes. Then remove it from the pan and allow to cool for at least one hour prior to slicing.

  1. I am leaving another comment because- I love this recipe!!! I actually didn’t realize that I was supposed to make the cake mix from scratch, oops… I have been using the Betty Crocker GF Vanilla and GF Chocolate mixes. The recipe works every time, it’s never runny or gummy and never sinks or cooks unevenly. Today my daughter swapped the bananas for zucchini and made the most delicious zucchini muffins and then I decided to use up some leftover strawberries and swapped the bananas for strawberries. All the muffins were so good. I can’t thank you enough for this recipe.

      What a great story! Thanks for sharing it! Yep! I created a copycat recipe of Betty Crocker’s Gluten Free Yellow Cake Mix. Many people tell me my homemade version is better. If you make it, you’ll have to let me know.

  2. Just made this recipe- THANK YOU! It was so easy to make and tastes delicious. I added 1 tsp of vanilla, used 3 small bananas, and added chocolate chips and walnuts. I baked them in muffin tins (made 18 muffins) for 30 min.
