Braciole is a dish popular in Southern Italy such as Sicily. It is either spelled braciole or braciola. Most Italians use beef; however, when using chicken, it is pounded and stuffed with your favorite ingredients. In this case, I used prosciutto, spinach, and Mozarella cheese. I have been making an effort to reduce the carbohydrates in my diet. I purchased a Spiral Vegetable Slicer and my first experiment was making zucchini ribbons. Using zucchini pasta instead of high carb rice or corn pasta saves a tremendous amount of carbohydrates. One medium zucchini contains only 6g carbs and 2g fiber. My favorite gluten free brown rice pasta contains 43g carbs and 2g fiber per 1/2 cup of uncooked pasta. If you enjoy zucchini, you will love this dish. Bob’s Red Mill just released a new product, a gluten-free baking flour that can be used cup-for-cup in your gluten free desserts, without bean flour. They suggest using traditional recipes and substitute the wheat flour/all-purpose white flour with their new Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. I created a copycat gluten free flour, similar to 1-to-1, which also works well in cookie, cake, brownie, muffin, and pancake recipes, to name a few.
