Crispy Gluten Free Breaded Zucchini Rounds: Baked or Fried

Learn how to make these gluten free breaded zucchini rounds crispy in the oven or on the stovetop. Either way, they turn out delicious and crispy. For a lower-fat version choose the oven method and use egg whites instead of oil. These are also a wonderful way to get kids to eat zucchini, at least it was with mine, when they were young.

Gluten Breaded Zucchini Rounds: Baked or Fried

Serve these lovely gluten free zucchini rounds as an appetizer, vegetable or side dish. Bake them and use egg whites for a low-fat variety or pan fry and use plenty of oil. Either way, they turn out crisp.

Ingredients:

  • 1/2 cup Seasoned Gluten Free Bread Crumbs
  • 1/2 cup additional grated Parmesan cheese
  • 1 lb. zucchini, sliced to 1/4-inch thick

Instructions:

  1. To bake the rounds, preheat oven to 450ºF. To fry, preheat a large skillet with a good layer of oil.
  2. Combine the seasoned bread crumbs and additional Parmesan cheese in a shallow bowl or plate.
  3. Add sliced zucchini to a bowl; drizzle with oil; and toss to coat. (Alternately, dip in egg white.)
  4. Dip a couple of rounds at a time into the bread crumb mixture on all sides.
  5. Transfer to the prepared baking sheet or immediately fry in oil.
  6. If frying, once bottoms are brown, turn over to fry other side until crisp. If baking, there is no need to turn them over as the oiled pan will brown the bottoms nicely. If baking, bake them for about 25 minutes or crisp.
