I usually make this low fat cream of broccoli soup by only using chicken broth, and sometimes even make it lower in fat by substituting some of the broth with water. However, this time I added some milk and a splash of whipping cream to make this higher in calorie for my father who is on a high caloric diet. I have added both low fat and high calorie variations in the recipe below. Lucky for me it’s easily made gluten free. I hope you enjoy this low fat cream of broccoli soup recipe, or the rich version. They both turn out creamy. I’ve enjoyed both! Continue reading “Gluten Free Low Fat Cream of Broccoli Soup”
Gluten Free Basil Cream Sauce
This basil cream sauce recipe is lower in fat than those made with whipping cream or evaporated milk. Yet it was so yummy on my ravioli. Basil cream sauce is naturally gluten free, however, if using a commercially grated cheese, you’ll need to ensure that is is gluten free. Make it dairy free by using milk and cheese substitutes. My husband is not a fan of cream sauces, but with the basil flavor, he even liked it on gluten free raviolis. Continue reading “Gluten Free Basil Cream Sauce”
Gluten Free Ravioli with Beef Filling
A culinary student made and served these ravioli to her class. They enjoyed them better than their gluten versions. Fill them with beef or your favorite ravioli filling, cheese or creamy butternut squash (from this gluten free ravioli recipe). I like to use this recipe for fried ravioli. You can learn how one of my recipe testers served this, as well.
Gluten Free Sweet Potato Muffins
These gluten free sweet potato muffins have the weight and texture of a quick bread, such as banana bread, but perhaps a little lighter. They are very moist, and more importantly, packed with nutritious ingredients which I wouldn’t mind giving my grandchildren. And being that I used xylitol instead of sugar, I look forward to using them as a healthy snack for myself more often. These gluten free sweet potato muffins would make an excellent substitution for cornbread this Thanksgiving, as well. And they are a great way to use left over sweet potatoes! That was my reason for creating this recipe. Enjoy! Continue reading “Gluten Free Sweet Potato Muffins”
Gluten Free, Dairy Free, Sugar Free Eggnog Recipe
I had never tasted a sugar free eggnog recipe before today, but the holidays are almost upon us and who cannot resist all of that sugar, dairy, chocolate, what have you? I certainly have trouble doing so! I do not have eggnog very often, but when I do, I just cannot seem to stop myself from having a second glass. Heaven knows if we have a holiday dinner and there is left over eggnog, I’m having it for breakfast instead of my healthy protein shake. This year, I just had to get a hold of myself prior to the holidays. This is what inspired me to come up with this sugar free eggnog recipe.
You can double, triple, etc. as needed.

Gluten Free Onion Gravy Recipe
I promised you all my gluten free onion gravy recipe, and here it is. Whether you leave in the onion pieces or puree until smooth, this is an easy, delicious gravy. You can make this sauce virtually any color you chose. If you wish a brown gravy, add a tiny bit of Kitchen Bouquet; use some milk for a white sauce, or leave its natural yellow color from the butter and oil. You may also use all oil instead of half butter and oil. Though butter adds flavor. This is a great onion gravy recipe without having to use any meat drippings. I used it over my Gluten Free Toad in the Hole recipe. Continue reading “Gluten Free Onion Gravy Recipe”
Gluten Free Hummus
mmuHummus is naturally gluten free, however, adding a wrong ingredient can send someone with a high gluten-intolerance into a world spin. This gluten free hummus is sweetened with pineapple juice and vinegar (due to my citrus allergies) rather than lemon juice, but feel free to use either. Hummus does not keep well. Therefore, ensure its refrigeration as soon as possible. I made some homemade gluten-free tortilla chips which was a wonderful compliment to this gluten-free hummus, as they were nice and spicy! Enjoy! Continue reading “Gluten Free Hummus”
Chili Macaroni Casserole: Gluten Free Hamburger Helper Style Recipe
Since gluten free Hamburger Helper (actually named “Helper”) will no longer exist once all sold, I thought some of you may appreciate a gluten-free hamburger helper style recipe. As of the date of this recipe, I’ve read all over the internet that some of the old Helper may still be on shelves, but it is best to read the labels and be aware that the newer packages contain the statement, “May contain wheat”. Enjoy this homemade gluten free hamburger helper style recipe, just like you used to! Continue reading “Chili Macaroni Casserole: Gluten Free Hamburger Helper Style Recipe”
Gluten Free Pop Tarts – Style Pastries
Last month one of my Facebook friends asked me for a gluten free pop tarts recipe. I created this one for her. I filled one with chocolate ganache that I already had on hand, and the chocolate held up very well, even when fresh out of the oven. It did not ooze out of the pastry once cut. The others I filled with orange marmalade (the best!). Another I made sweet and savory by using a hot and spicy raspberry filling straight from a jar. The last I filled with a sweet walnut paste that I use in my walnut butter cups. Loved them all!
Update: You may also use gluten free pie filling. Comstock brand and Wilderness brands are gluten free. Continue reading “Gluten Free Pop Tarts – Style Pastries”
Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)
These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Well, I played around with 2 different batches today, and finally achieved success! Enjoy! And if you’re dairy-free, see “Tips” for a great dairy free ganache.
