This gluten free phyllo dough recipe (or gluten free filo dough) is so easy to make compared to traditional recipes! Fortunately, for those of us on a gluten-free diet, we finally have an advantage in baking without gluten. Gluten is not our friend in attempting to create a flaky crust. Flakiness is what is needed in phyllo dough. This is my first attempt at creating a gluten free phyllo dough recipe. I began with my tart crust recipe and made it more flaky and crispy. Phyllo dough can be used with sweet or savory fillings, such as pastries, croissants, meats or cheese fillings and more. Yum, right? For a filling I used gluten-free custard which I use in my gluten-free cream puffs and for crème brûlée. What will you use for a filling? The crust turned out flakier than any crust I have ever made! I was so pleased. All those interviews with all of those gluten-free experts and chefs really really paid off. Yeast-Free Gluten Free Focaccia Bread

This gluten free focaccia bread is commercial yeast-free. If you are allergic to yeast you may try substituting the apple cider vinegar with a bit of 1/4 teaspoon of cream of tartar. I haven’t tried it myself, but any high acidic ingredient will do, lemon juice, etc. This is a hearty recipe, much like regular focaccia. Gluten Free Teriyaki Steak

This gluten free teriyaki steak can be made with or without pineapple, but the pineapple makes a very nice compliment to the sweet and salty teriyaki sauce. Because it is grilled in the same pan the steak is, it tends not to be very sweet, but just lends a hint of sweetness. Serve over rice or just with a vegetable if you are a low-carber. Gluten Free Teriyaki Sauce Recipe (or Marinade)

I needed some gluten free teriyaki sauce and there was none in the house. What’s a girl to do?  I gathered some of the traditional ingredients in teriyaki sauce and added a bit of pineapple juice for some extra nutrients. The base is tamari sauce. It is wonderful that San J makes gluten-free soy sauce, actually tamari sauce, because it contains no gluten. Tamari is a light soy sauce. All tamari sauces are made with more soy beans than regular soy sauce. Soy sauce is made from wheat and soy beans; therefore, those on a gluten free diet use Tamari. Raw Banana Ice Cream

There is a YouTube video on how to make raw banana ice cream with a juicer. You just remove the skin from bananas; freeze the bananas, whole; remove the filter or screen from your juicer; feed them through and voila! – You have soft serve banana ice cream.  However, what does one do if they do not have a juicer? You can even make ice cream without an ice cream maker and both without a juicer. This recipe is gluten-free, vegan, raw, refined sugar-free and sugar-free, as it is naturally sweetened. Enjoy this healthy treat!

Gluten Free Chili Recipe Without Tomatoes

This gluten free chili recipe is made without tomatoes. I taste-tested this recipe so much I didn’t even need lunch, it was that good! You don’t need to cover this up with cheese and onions, but by all means, enjoy! It naturally thickened without the use of flour, but you can make it as thin or as thick as you wish. I wanted a thick chili today for use in my chili lasagna recipe. I will post that recipe in the next couple of days. In deciding what ingredients to use in this gluten free chili recipe, I considered some of the ingredients of my daughter’s award winning chili recipe, chocolate and bacon, but decided to go on the healthier side with lots of peppers, onion, green chiles and lean ground beef. Baked French Fries Mozzarella and Gravy with Optional Beef Stew

I was watching the Best Thing I Ever Ate and they explained how they made french fries with Mozzarella cheese and gravy. Boy did they had my mouth watering! In their version, the french fries were soaked to remove some starch; swirled in a bowl of fresh garlic; deep fried in duck fat once; then again 24 hours later; and topped with Mozzarella cheese and brown gravy. I chose to make my Baked French Fry Recipe to make it lower in fat and calories, and threw in some of my beef stew with wine simmered gravy made with very lean beef with all excess fat removed. It was heavenly! You can even use bison. Have fun with this one! Add your favorite meat or leave it as is. I’m sure the kids will love this, too! – similar to chili cheese fries, but a bit healthier! Gluten Free Sauteed Napa Cabbage

I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! Gluten Free Asparagus Prosciutto Risotto

On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice.  However, because prosciutto is already very salty I opted on just topping the rice off with a little parmesan cheese.
