Perhaps you are vegan, vegetarian, dairy free, or just wish to avoid processed ingredients. If so, you have to try this healthier version of ice cream. This is a rich coconut ice cream recipe that is naturally gluten-free. Rather than using heavy whipping cream or half & half, this recipe calls for all full-fat gluten free coconut milk. Coconut milk makes the perfect substitute for cream and eggs in ice cream recipes. If you can tolerate eggs, you can reduce the coconut milk by a 1/2 cup for every 3 eggs added. When you roll ice cream into balls and then coconut flakes, they look like snowballs. Enjoy! Continue reading “Coconut Milk Ice Cream Recipe”
Gluten Free Vegan Granola Recipe
Nature’s Path sent me a couple of boxes of their new Qi’a Hot Oatmeal in Creamy Coconut flavor. I don’t usually enjoy coconut in my oatmeal; therefore, I had to find another use for it. I love coconut in granola and used it for that. I also usually use plenty of superfoods in my granola. This was so easy to make because Qi’a Hot Oatmeal already contains many of them. This was my first experiment making vegan granola, though, as many vegans do not consume honey. I enjoyed it and hope you do, as well. Continue reading “Gluten Free Vegan Granola Recipe”
Gluten Free Oatmeal Protein Shakes Recipes (Dairy Free)
The other day, I needed a fast, healthy, light lunch. I waited too long to eat lunch and didn’t want to ruin my dinner. My first thought was protein shakes, but I didn’t have my go to fruit, banana. Being out of them, I reached for some frozen blueberries instead. But how was I going to get full on those? Well, I found a fulfilling source of protein, oatmeal. Oats are the highest protein gluten free grain. I used a packet of Nature’s Path new Qi’a Hot Oatmeal in the Creamy Coconut flavor. The coconut flavor was overpowered by the blueberries, but it still tasted wonderful and was the perfect low-cal, healthy choice. The added grains, seeds and fiber makes it more flavorful and healthier. Plus I love anything that has a bunch of ingredients in one package. Meanwhile, you can use bananas, strawberries or your favorite fruit. Enjoy and stay healthy! Continue reading “Gluten Free Oatmeal Protein Shakes Recipes (Dairy Free)”

Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods
Nature’s Path just came out with three flavors of their new Qi’a™ Superfoods Hot Oatmeal. Flavors include Creamy Coconut, Superseeds & Grains and Cinnamon Pumpkin Seed. I love the Superseeds & Grains because it has a bit of crunch. It contains rolled oats instead of quick-cooking oats like so many brands. They asked me to create a recipe using my favorite flavor for their Pinterest Oatmeal Month (January) contest and here it is, a gluten free vegan oatmeal raisin cookies. They are so good that when I made them (just before dinner), I ate three and couldn’t eat my dinner. It was one of those nights…eat dessert for dinner and a small dinner for dessert. Mind you, I am not on a dairy-free or vegan diet, yet they still met my requirements for a chewy cookie. Enjoy!
Note: These are easy to make because the oatmeal packs contain six ingredients, with less to purchase and measure. Continue reading “Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods”
Easy Gluten-Free Dairy-Free Mashed Potatoes (or Traditional)
This gluten-free dairy-free mashed potatoes recipe is not only easy to make but is delicious; and is made completely allergen-free. They are made without dairy, casein, soy, nuts, or any of the eight major allergens. Instead of peeling the potatoes and cubing them, you boil them whole and the peel just slides off. The main thing is you don’t have to sacrifice on taste. If you are not allergic or intolerant to any of these ingredients, feel free to use butter and cow’s milk. Gluten Free Hot Chili Oil Recipe
I use hot chili oil in many of my Asian dishes such as the dipping sauce for my Gluten Free Potstickers Recipe and sometimes in Fried Rice. Often readers inform me that they cannot find chili oil in their local stores. I decided to solve that problem by supplying you with a homemade hot chili oil recipe. I hope you enjoy it and find it useful. You can fry chicken in it, add a bit to ice cream and other unsuspecting food. Continue reading “Gluten Free Hot Chili Oil Recipe”
Mild Gluten Free Sweet Chili Sauce Recipe
Sweet chili sauce is a Thai favorite. You can purchase this sauce in bottles. One brand that is gluten free is Thai Kitchen Sweet Chili Sauce. If you’re allergic to tapioca, choose another gluten free brand or make this recipe. It’s easy to make it at home, though; and can be stored for a very long time. (Though it begins to loose its heat after a month or so.) While ginger is not a common ingredient in sweet chili sauce, I provide it as an option in my recipe. Lately, I use fresh ginger in almost all of my Asian dishes. Use this sauce in dips, dipping sauces, and my favorite, Asian Chicken Lettuce Wraps/Cups. I think I’ll start using this as my go-to dip for my Gluten Free Potsticker Recipe. Since it contains no oil, it is low in fat and calories (not carbs). For added calories, use a little salad oil or my new Gluten Free Chili Oil Recipe. Continue reading “Mild Gluten Free Sweet Chili Sauce Recipe”
Grain-Free Gluten-Free Black Bean Brownies (Allergen-Free)
Bean flours create higher risen baked goods, but many of the flours create a bitter flavor. One way of getting around this is by using cooked beans. I prefer to use refried black beans. They’re so creamy and not bitter at all. The dark color is perfect for chocolate dishes such as this gluten free brownie recipe. It is dairy-free, gum-free, and grain-free, techinically, as buckwheat is a seed, not a grain. Some refer to buckwheat as pseudograin.
