Gluten Free Oat Milk Recipe

Homemade Gluten Free Oat Milk

While you can purchase oat milk in your local grocery store, the oats used in that milk is most likely not gluten free. Due to oats growing in fields adjacent to gluten crops and multiple other reasons, regular oats can contain up to 10% gluten. You can make your own gluten free oat milk at home. It’s easy and less expensive. I notice a quart of organic oat milk costs $3.49 at my local grocery store. You may not be able to find organic oats, but you can make a quart and  half for a little over $1.00; and it won’t contain any gum. You can also control its protein and sugar levels depending upon how many oats and the type of sweetener you use. Enjoy! Continue reading “Gluten Free Oat Milk Recipe”

Honey Ginger Glazed Carrots

Honey Ginger Glazed Carrots

Are you tired of the same old vegetables? I sure am! When I created this recipe for ginger glazed carrots my first intention was to avoid granulated sugar. Before I knew it, I added ginger, but was sure if I was going to remove it or not after cooking. I didn’t remove the ginger slices and it added a bit of kick to my meal. I loved it! I’ll leave it up to you if you leave them in or not. Enjoy! Continue reading “Honey Ginger Glazed Carrots”

Basic Basmati Rice Recipe

Fluffy Basmati Rice

I was about to make some basmati rice (Indian white rice), but was wondering if soaking rice was healthier. I already soak beans and nuts to remove enzyme blockers. In my research, I discovered soaking basmati rice, as well as others, not only removes some nutrient blockers, it makes it easier to digest. In addition, the soaking speeds up the cooking process. You’ll appreciate the rinsing process because it removes so much of the starch that it makes this a fluffy, not sticky, basmati rice recipe. I use it with my Chicken Korma Recipe. Enjoy! Delicious Cream of Rice Cereal Recipe

Gluten Free Cream of Rice Cereal

Adding a little fruit or fruit puree, nuts, dried fruit, and cinnamon creates this delicious cream of rice cereal recipe. Of course, it’s all gluten free. The cereal alone is an  excellent source of iron. You can also use cooked rice as a substitute. I know a few people who have tried replacing their cream of wheat with cream of rice and did not care for it, but this recipe is mind changer.  Continue reading “Delicious Cream of Rice Cereal Recipe”

Gluten-Free Egg-Free Peanut Butter Cookies

Gluten-Free Egg-Free Peanut Butter Cookies with Filling

I am big on nut butter cookies. You can use peanut butter or almond butter, whichever you prefer. I have made Flourless Peanut Butter Cookies, Crunchy Peanut Butter and Coconut Cookies, Sugar Free Peanut Butter Cookies with OatmealChocolate Peanut Butter CookiesDairy-Free Peanut Butter Cookies Using Cookie Mix, and now, gluten free egg free peanut butter cookies with teff flour. They’re all wonderful and some are considered grain-free as teff and buckwheat are seeds, not grains. However, my all-time fave is Gluten Free Nutter Butter Cookies Recipe (Dairy-Free). Those are a bit more time-consuming than this new recipe. I enjoy this new one for its nutritional value, ease of preparation, and flavor.  I hope you enjoy them, as well. They’re dairy-free, egg-free, and gum-free, to name a few. They are also grain-free as teff is a seed, not a grain. Continue reading “Gluten-Free Egg-Free Peanut Butter Cookies”

Stevia Sweetened Homemade Almond Milk

Up to a few years ago, I was making a homemade almond milk recipe created by Ani Phyo, date sweetened almond milk. However, due to its high carbohydrate content, I switched to unsweetened.
