The definitions of chantilly is 1. (of cream) flavored whipped cream, usually flavored with vanilla, but it can also be rum or liqueur; and 2. (of food) food prepared or served with whipped cream such as peach chantilly: peaches served with whipped cream which is usually flavored. Chocolate chantilly is a very strong flavored whipped chocolate which contains about 75% cocoa. Because the chocolate is so intense I decided to set some of it aside whip some heavy cream and powdered sugar into it. This enabled me to create a nice layer affect. It creates a beautiful presentation, and once you add whipped cream to the top, it all balances out nicely. Homemade Sweet Potato Chips (Naturally Gluten Free)
With summertime approaching, and our already warm weather, I am picturing backyard barbecues and picnics on the horizon. What better way to celebrate than with a healthier snack. Rather than reaching for processed potato chips, or expensive natural ones, you can make your own right at home. The great thing about homemade sweet potato chips is that they are lower in carbohydrates compared to regular chips. When making them at home you can use a healthier oil, as well. Toasted Hemp Seeds Recipe for Bread and Salads
If you like a little crunch and a nutty flavor in your gluten free whole grain bread, this recipe for toasted hemp seeds will be a perfect fit for you. It’s very easy to do and takes very little time. You can toast any seeds, but hemp seeds in particular need to be toasted, as they are hard seeds. Other seeds such as sesame seeds don’t need to be toasted. You can use toasted hemp seeds not only on the tops of your bread, but inside, as well. Now, get to baking some gluten free bread!

Roasted Butternut Squash
In preparation for my upcoming butternut squash ravioli recipe I wanted to share my new roasted butternut squash recipe with you. Of course, once I create the ravioli recipe, I will link to this recipe. It is naturally gluten free, does not contain any allergens, and is very yummy! If plan on pureeing this for any reason, consider using a portion of butternut squash and and a portion of sweet potatoes. It makes it thicker and creamier without the use of cream or cheese. Soft Gluten Free Naan (Indian Flatbread)
Naan is luscious Indian flatbread, similar to a tortilla, but thicker. With one simple alteration, you can roll or pat them out thinner to use as tortillas. The flavor and texture are so good that they should be a sin to eat. By far, this gluten free naan is my most raved about recipe. People liken them to their gluten counterpart. Naan is full of possibilities.

Chicken and Vegetable Gluten Free Risotto (with Vegan Option)
If you have some leftover chicken, this gluten free risotto recipe will knock your socks off. Make it sweet or spicy with two choices of sauces. This is also a dish you can easily make in advance for guests. For a quick and easy weeknight meal, use left over chicken and vegetables. All you’ll need to do is cook the risotto. Gluten Free Honey Graham Blondies (Egg-Free with Dairy-Free Options)
For the bottom layer of these gluten free blondies, or dessert bars, if you wish, I used my gluten free graham cracker recipe. I added a bit more honey and butter to soften the crust. You may add sweetened condensed milk, or for dairy-free, coconut milk and honey. After that you top it with your favorite toppings: chocolate chips, nuts, oatmeal, and/or shredded coconut. I skipped the coconut due to allergies. Of course, if you’re dairy-free you’ll use your favorite brand of dairy-free chocolate chips. I’ve listed the most popular, easy to melt brand below. Irish Coffee (Naturally Gluten Free)
In honor of St. Patrick’s Day and our partly Irish heritage, I hope you enjoy this gluten free Irish coffee recipe. Though Irish coffee is traditionally served with Irish whiskey, per the 2014 interim labeling rules, alcohol made from gluten grains should not be labeled gluten free. You can use sorghum whiskey, but vodka will do in a pinch. In addition, traditional Irish coffee is topped with either cream on or softened whipped cream. Gluten Free Stuffing Muffins
Stuffing, aka, dressing, is not just for the holidays. I find that a great way to use stale or over-baked bread is to make muffins with your gluten free stuffing. They freeze well, and you can rebake them as needed, making them a great side dish for weeknight meals. I had left out some of the water in my Gluten Free Millet Bread Recipe, and it turned out dry. Stuffing appears to be my answer, as to not waste it. I’m really glad that I did, as it was surprisingly delicious! I’m not one to use a whole grain bread for stuffing.
