My sister makes the best macaroni and cheese anyone has ever tasted. I recently asked her for her recipe. She is one of those that does not measure anything, but with some thought, she was able to come up with some approximations. I turned it into a gluten free macaroni and cheese recipe using a variety of gluten free pastas and topping it off with homemade seasoned gluten free bread crumbs. Some like the bread crumbs seasoned and other do not. What will you make? Continue reading “Gluten Free Macaroni and Cheese”
Raw Almond Pistachio Avocado Ice Cream
This recipe is dairy free, refined sugar-free and additive-free. I love pistachio ice cream but have had trouble thinking of a way to make it green without using artificial food coloring. I recently learned that avocados may be used as a substitute for eggs. Do you see where this is going? A raw avocado ice cream recipe made with almond milk, but instead of using vanilla extract, as some may have thought, I used almond extract. Just delicious! It also contains agave syrup. Check out my recipe below. Continue reading “Raw Almond Pistachio Avocado Ice Cream”
Hemp Milk Recipe
I had purchased some hemp seeds a few months ago when I was watching one of Ani Phyo’s Raw Food Kitchen videos, but since I am already adding hemp protein I feel that I do not need them in my morning protein shake. I also made the mistake by ordering hemp seeds still in their shells and they also were not raw but heated. They are so tiny, I could not possibly shell them myself. I needed a use for them and found it, a hemp milk recipe! I am sure you can make the same recipe with raw hemp seeds, too. Continue reading “Hemp Milk Recipe”
Gluten Free Potatoes and Onion Recipe
This recipe is so simple, yet so delicious. It was my mother’s recipe. Now it is one of my staple gluten free potato recipes. She’s been gone for some years, but it brings me comfort and makes me smile every time I make this dish. Kids tend to not like them very brown, but by all means brown them up as much as you desire. I usually do, unless my grandkids are over. Continue reading “Gluten Free Potatoes and Onion Recipe”
Vegan and Gluten Free Stuffed Zucchini Recipe
I have been craving an old recipe of mine that I no longer can have due to my tomato allergies, but created this one as a substitute. There a ton of variations to this recipe which is great because you’ll never tire of it. You can either keep it vegan or add meat, cheese, etc. You can use traditional shaped zucchini or round ones if you can get a hold of some. The one I used in the photo below is from my garden. Gluten Free Vegan Zucchini Mango Soup
Looking for delicious gluten free soup recipes? I harvested my first round zucchini (photo below) this week and decided to use it to test a new mango soup recipe. You are sure to see more zucchini recipes in the near future because my plants are growing like crazy! You can serve this soup warm or cold. This is recipe is great way to use up any produce you have that may soon spoil or wilt. My original intention was to only use vegetables and one fruit, but I was awfully hungry while making it and decided to toss in a potato and am glad that I did. It was very tasty and satisfying! Fast and Easy Homemade Gluten Free Sweet and Spicy Pickle Recipe – Zero Sodium!
I have been wanting to make some homemade pickles, which is something I have never done before, when I saw a bag of mini pickles at Costco the other day. I just had to have them! I created an easy pickle recipe that you can either spice up or not with red pepper flakes to your liking, as well as adjust the sweetness. Since our grandkids were visiting this week I was in a hurry and wanted a fast recipe so I opted to make sliced pickles instead of leaving those adorable little things whole. I hope you enjoy the recipe. Continue reading “Fast and Easy Homemade Gluten Free Sweet and Spicy Pickle Recipe – Zero Sodium!”
Gluten Free Roasted Garlic Walnut Pesto
I wanted to make a walnut paste to be used on pasta or when chilled even on crackers or celery, but the recipes I found contain raw garlic. I really wanted to make a walnut paste with roasted garlic, therefore, I began a new experiment. I thought about using pine nuts, but I wanted to create something yummy for everyone that was affordable. You make this as a paste or as a walnut pesto sauce. Low Fat Healthy Baked French Fries
Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise form the bottom through holes in the pan, allowing browning to occur on both sides. A little olive oil spray makes them taste like regular french fries. UPDATE: I have successfully made these using a regular baking sheet. You may use russet potatoes, sweet potatoes, or golden or red potatoes. Guilt free French fries! What’s not to enjoy? Continue reading “Low Fat Healthy Baked French Fries”
Gluten Free Broiled Marinated Zucchini
