Recent time spent with my grandchildren got me to thinking of my childhood. I remember eating pink caramel popcorn. Remember that? All that sugar just seemed wonderful, and the artificial coloring made it very attractive! Fortunately, now, most people are gearing up towards healthier choices. No more red dye no. 40 which contains petroleum and less refined sugar. I decided to try a popcorn ball recipe sweetened with agave syrup. Low Fat Baked French Fries

Let’s face it french fries that have been deep fried are high in calories. If you’d like a french fry lower in fat and calories just bake them. I’m all for low fat french fries! I recently purchased a Nonstick French Fry Baking Pan which allows the heat to rise from the bottom through holes in the pan, allowing browning to occur on both sides. Who doesn’t like au gratin potatoes, right? You can make this dish with milk, cream, half & half, a combination thereof, or a milk substitute. If you’re dairy free you can use a cheese substitute. For vegan or dairy-free use a cheese and milk substitute. This gluten free au gratin potatoes recipe is made without any flour at all. Enjoy!

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. Gluten Free Blackberry Sauce for Ice Cream and More

My father came for a visit recently and he just loves homemade vanilla ice cream. I only like vanilla if has a topping, though. So, I had some fresh blackberries that were not very sweet. I sweetened them up a tiny bit by making an ice cream topping. It is made with fresh blackberries, a little organic blueberry fruit spread and agave syrup. It is not very sweet, but the fruity flavor combined with the sweetness of the ice cream is just perfect. I enjoyed it, as did my other guests. Gluten Free Carrot Cake (Sugar-Free)

Gluten Free Sugar Free Carrot Cake with Chestnut Flour

This recipe is very moist, yet not too heavy. It is flaky, like regular carrot cake. All that and it’s oil-free, milk-free, and sugar-free. It contains eggs. Those who cannot tolerate corn should be aware that xanthan gum is derived from corn, though some manufacturers state that the corn sugars are removed in processing. You may consider using guar gum instead. This far surpasses my carrot muffin recipe that I posted previously. I cut a piece to take a photo, but once I felt the texture I ate it instead (laugh)!
