Of course, once I create the ravioli recipe, I will link to this recipe. It is naturally gluten free, does not contain any allergens, and is very yummy! If plan on pureeing this for any reason, consider using a portion of butternut squash and and a portion of sweet potatoes. It makes it thicker and creamier without the use of cream or cheese. I had plans on making gluten free macaroni and cheese and then had the idea that adding some broccoli would be a great combo. Then I got carried away and decided to through the some chicken breast fillets in at the bottom of the baking dish. It made the chicken very moist, and delicious. I hope you enjoy this recipe. Gluten Free Low Fat Cream of Broccoli Soup

Cream of Broccoli Soup - Gluten Free

I usually make this low fat cream of broccoli soup by only using chicken broth, and sometimes even make it lower in fat by substituting some of the broth with water. However, this time I added some milk and a splash of whipping cream to make this higher in calorie for my father who is on a high caloric diet. I have added both low fat and high calorie variations in the recipe below. Lucky for me it’s easily made gluten free. I hope you enjoy this low fat cream of broccoli soup recipe, or the rich version. My father is ill, and all of us daughters are taking very good care of him. I went shopping for him and came back with cauliflower, which he wasn’t too happy about. However, he said he would eat cauliflower soup. That was a perfect idea on a chilly San Francisco day. Gluten Free Zucchini Bread

Quite a bit of research went into creating this gluten-free zucchini bread recipe to get this recipe just right. Most gluten free quick bread recipes (breads using leavening agents to enable immediate baking, rather than allowing to rise), allow you to interchange the fruit vegetable or puree you use, except for zucchini bread recipes. Zucchini contains quite a bit of liquid. Therefore, you either need to lessen the other liquids in the recipe or squeeze out much of the liquid in the zucchini. Instead, I began with my banana bread recipe, and opted to add additional flour. ThisĀ gluten free zucchini bread recipe was made with my own blend of gluten free cake flour. I link to it below. Zucchini Hash Browns

Several weeks, perhaps months, ago, I created a combined zucchini and potato hash brown recipe. Since then, I’ve been wanting to try just zucchini hash browns. The opportunity presented itself, as someone gave us a giant zucchini. It must have been 2 feet long and 6 inches wide. There isn’t much to this recipe, but it sure is delicious…and much healthier than your typical hash browns. In addition, it is much lower in carbs than regular hash browns!
