Due to my citrus allergy, my husband doesn’t get lemon desserts very often. Making him a mug cake was the perfect solution. He thoroughly enjoyed this gluten free lemon mug cake. You can add poppy seeds or berries if desired. Enjoy! Continue reading “Gluten Free Lemon Mug Cake with Lemon Glaze (Egg-Free)”
Thyme Roasted Potatoes and Peppers and Onion – Oh My!
I love this recipe for fingerling potatoes for a few reasons. I don’t have to peel the potatoes. I don’t have to slice small potatoes. The best thing is that they are incredibly delicious. I even surprised myself. I make them every chance I get! I can even eat them while on the Weight Watchers diet! We enjoy these potatoes more than mashed potatoes, and that says a lot. Gluten Free Hot Dog Bun Recipe – Hot Dog Buns
I’ve been working on this gluten free hot dog bun recipe since July 2016. I wanted them last year for 4th of July. Instead, I’ll be using them this Memorial Day. They turned out so fluffy inside! I’m very pleased. I made the dairy-free version, but because they turned out crispy on top, I ended up basting the top with butter to soften the crust. If you’re dairy free, I’m sure the inside dough texture will outweigh the firm crust. Enjoy! Continue reading “Gluten Free Hot Dog Bun Recipe – Hot Dog Buns”

Mock Rye Bread Gluten Free
Because rye contains gluten, I’ve created this mock rye bread gluten free, which may be made dairy-free. Rye flour does not work well alone in bread or other baked goods. Therefore, wheat flour and other ingredients such as vinegar and egg are usually added to create a good texture. Likewise with this gluten free mock rye bread recipe. I use similar ingredients to improve its texture. It contains the same wonderful rye flavors as its gluten counterpart. Try it for yourself! Continue reading “Mock Rye Bread Gluten Free”
