The recipe for this gluten free rainbow cake is also dairy-free. Of course, you will need to use a dairy-free frosting or dairy-free whipped cream (which I do not list below). Moist gluten free apple muffins anyone would surely enjoy, even your gluten-eating friends and family members. If you already have a batch of Carla’s Gluten Free All-Purpose Flour Blend Recipe already made up, they are fairly simple to make. This particular recipe should turn out well with any gluten-free all-purpose flour blend. Thin Soft Gluten Free Wraps

These gluten free wraps are soft and pliable, and that’s not all. They are packed with protein. They fall somewhere between a tortilla and a crepe. Don’t allow the fava bean flour to scare you off, if you have tried other bean flours and they were bitter. Fava bean is very mild and not bitter at all. Combining beans with eggs boosts the nutrient values in the beans as eggs are a complete protein (contains all essential amino acids). This recipe is gum-free and grain-free. Gluten Free Blueberry Coffee Cake

This gluten free blueberry coffee cake may be made three different ways. You can use canned blueberry pie filling and layer it as seen in the photo below and add an optional glaze. You can use fresh or frozen blueberries and fold them into the batter. Lastly, once you fold the blueberries into the batter you can top it with the streusel topping recipe I have supplied below. I chose the quickest method, pie filling, and it was delicious. Enjoy this blueberry coffee cake, no matter how you assemble it. I have included instructions on how to bake it in a 9-inch round pan, 9 x 9-inch square pan, or see the tips section for making a larger one in a 9 x 13-inch pan. Gluten Free Anadama Bread

This gluten free anadama bread recipe is a variation of the Anadama bread made years ago in Massachusetts. It was a corn meal and wheat-based bread lightly sweetened with molasses. Though it existed prior to the 1840s, a baker used to deliver the bread to households in in the late 1800s in Massachusetts. It was later baked by a restaurant owner until 1956, and then by a bakery on Cape Ann in Massachusetts until 1970. Other bakeries offered anadama bread for several years later, however, it eventually lost its popularity. This gluten free anadama bread is similar, but uses rice flour instead of wheat. If you are intolerant to rice flour, you may substitute it with sorghum flour. This bread makes a wonderful breakfast bread as it tastes a bit like an English muffin. Chocolate Gluten Free Crepes

Crepes are a thin, moist pancake, and usually richer due to added butter. However, this gluten free crepes recipe may be made with healthier by using margarine, dairy free spread, and dairy free milk, if desired. For darker crepes, use Dutch processed cocoa (Rodelle brand is gluten free). It is not acidic like pure cocoa powder. Meanwhile, enjoy these gluten free chocolate crepes. Egg foo young, also spelled egg foo yong, egg fu yung, egg fooyung, and egg furong, literally means “lots of eggs”. This gluten free egg foo young is prepared with eggs, vegetables, and meat or shellfish, if desired. You can add your favorite vegetables or traditional bean sprouts, bamboo shoots, sliced cabbage, or mushrooms, to name a few ideas. Water chestnuts or bamboo shoots add a delightful texture. What makes it distinctly different from frattata (its Italian cousin) is the sauce it is served with. My quest to develop a gluten free ice cream sandwich took much more time than I expected. I first tried to adapt my own moist Gluten-Free Dairy-Free Chocolate Cake recipe. I just left out the leaveners. However, it turned out very gummy and too chewy. In my search to adapt a gluten ice cream sandwich recipe, all recipes fell short of my expectations by viewing their photos.
