Most corn tortillas are made with masa harina which are treated with lime. Since I am allergic to lime (both citrus and the type used to treat masa), I created this gluten free corn tortilla recipe using cornmeal instead of masa harina. This gluten free spinach pasta recipe is adapted from my Gluten Free Egg Noodle Recipe. You may be surprised that spinach pasta does not contain a lot of spinach, but it certainly is healthier to include it than not. Spinach pasta brings color to meal and a bit of savory flavor. You cannot tell it contains spinach when you taste it, especially if you use a flavorful sauce. I tested mine out with my latest Gluten Free Bechamel Sauce mixed with Parmesan cheese. Gluten Free Chocolate Mocha Bread Pudding

While visiting good friends out of state, my closest friend made these delicious mocha gluten free bread puddings. Knowing that I am gluten-free, she asked me to bring my own bread. (I’m allergic to tapioca therefore it’s difficult to buy bread for me.) I brought some homemade oat bread, but Udi’s or any absorbable gluten free bread will work well. I changed the direction to make it a bit easier. They were delicious, full of chocolate and coffee flavor. While Kahula is gluten free, you may make them non-alcoholic. Enjoy! They were fabulous! These gluten free buttermilk biscuits turned out amazing! Recently I developed a recipe for a substitute for Gluten Free Bisquick. While everyone really enjoys the recipe and has been raving about it, I found it a little too starchy. So, I improved upon the blend while creating this new gluten free buttermilk biscuits recipe. I used cornstarch as a base instead of potato starch and later added some additional potato starch. I was able to enjoy these biscuits without adding butter, straight from the oven. I have several different gluten free oat bread recipes, one for bread machines, one that is dairy free, and another that contains milk. However, because I am allergic to tapioca flour/starch, I created this oat bread recipe just for me, and others who are allergic to tapioca. Oat bread is my favorite gluten-free bread. It is flavorful, has a great texture, and is healthy for us. I hope you enjoy this recipe. Because it contains a little fava bean flour (which is not bitter), it rises high and makes it lighter. Gluten Free Lumpia and Dipping Sauce

While I already have a gluten free egg rolls recipe on this site, this gluten free lumpia recipe is a bit different. The filling and dipping sauce is spiced with garlic, and the sauce has strong accents of garlic and soy sauce. I usually make my egg rolls filled with ground pork, vegetables, and scrambled eggs and my spring rolls with all vegetables. This lumpia is filled with ground beef and vegetables, though you may use pork, shrimp, and more, as well as just vegetables. Either way, they are crispy and delicious as well as the sauce. Gluten Free Financiers (Mini French Tea Cakes)

Financiers (pronounced “fee naun seers” in French) are mini French tea cakes characterized by its almond flour. These gluten free financiers are no different other than it calls for “gluten-free” all-purpose flour. I like to use my all-purpose flour blend as it uses superfine rice flour which does not create a gritty texture, yet it rises high and tastes very close to gluten all-purpose flour. This recipe is made up of primarily flour, almond flour, sugar, and egg whites. I’ve suddenly been on an almond flour kick and egg white kick. They are a healthy choice. I hope you enjoy them. Gluten Free Flourless Almond Cake

This cake is naturally gluten free and is made with almond flour or ground blanched (skinless) almonds. It is extremely versatile as it can be flavored with almond extract, lemon zest, or orange zest. You can even use vanilla extract if that is all you have on hand. You can also add a bit of baking powder to create a lighter cake versus a pound cake texture. No matter how make this gluten free flourless almond cake, it is a delicious treat.
