Cauliflower au gratin is a great way to get that same rich, cheesy texture with a vegetable instead of potatoes. It reduces some of the carbs, as well. Though the calories in this dish are pretty high as it uses tons of cheese and cream. However, it makes a great dish for guests. Everything in moderation, right? Gluten Free Breaded Chicken using Whole Grain Crackers
Gluten free breaded chicken is no different than regular chicken. I usually use homemade gluten free seasoned bread crumbs, however, this time I wanted something more nutritious. I chose to use Van’s gluten free crackers. They come in several flavors and they’re all whole grain. I used their Lots of Everything flavored crackers. Gluten Free Lemon Pie
This gluten free lemon pie is a bit different than lemon meringue pie, as it is a bit creamy – not much, just a tad. In addition, it still maintains a bright yellow color. You can use Greek yogurt, as I list below, or sour cream. Just make sure whichever you use is gluten free. Make additional filling if you are not going to top it with whipped cream or Cool Whip. You have your four choices of gluten free pie crust recipes, very flaky, or two more traditional crusts. Hopefully, you find one that calls for an ingredient you already have in your pantry. Enjoy!

No-Bake Gluten Free Cheesecake and Crust (Dairy-Free Options)
I know you’re busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela’s Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You can spice it up with ginger snaps, chocolate chip or, chocolate chocolate chip. Get creative!

Gluten Free Chicken Mole (Mild)
Mole is a flavorful Mexican sauce that contains just a tad bit of chocolate. (Chocolate is great in chili, as well.) It usually contains plenty of hot chiles, but this gluten free chicken mole does not. Because chicken tenderizes so quickly it is a fairly fast recipe. When all is said and done you have a rich sauce covering moist, tender pieces of chicken. Instead of serving this with gluten free tortillas, you may serve it with soft naan bread (Indian flatbread). Gluten Free Pineapple Upside Down Cake
I’ve had a number of Facebook fans ask me for a gluten free pineapple upside down cake recipe over the years and I always plan to get right on it, but somehow do not. It’s my husband’s favorite, too! So, finally, yesterday when someone asked me for a recipe again, I developed a recipe immediately and baked it today. It turned out light and high with a perfect, moist texture. I was very pleased.
