Ingredients

  • 1-1/2 cups water
  • 2 tablespoons cashew butter (or almond butter)
  • 1/4 teaspoon monk fruit extract powder or your favorite sweetener (optional)
  • 1/2 teaspoon vanilla (optional)
  • 1/16 teaspoon salt

Instructions

  1. Add all of the ingredients in the order listed above to a tall cup, bowl, or blender. (I use the 2-cup container that my hand-blender came with.) Using a hand blender or countertop blender, puree until smooth. Strain if desired. (I don't.)
  2. Refrigerate until cold.
  3. Use for baking, drinking, and making ice cream.

Tips

Amazon Prime Pantry used to carry a 16-ounce jar of cashew butter for $8.99. The brand is 365, a Whole Foods brand. At $8.99 a jar, you'll have enough to make 16 portions x 1.5 cups water = 24 cups + 2 cups butter = 6-1/2 quarts plus the cost of any sweeteners or extract. If you buy organic, which is what I used, the same size jar costs $16.79 for Once Again brand on Amazon.
