I’m under deadline on another project but wanted to squeeze in a recent recipe request for a healthier gluten-free mug cake. I chose chocolate this time, as I already have a recipe for a regular Gluten Free Coffee Mug Cake (actual coffee cake). I love coffee mug cake, as they are so easy to make! To make it healthier by using xylitol which is sugar-free, and dairy-free by allowing you to choose the variety of milk. I hope this helps more than just the person who requested it, as it is delicious. I am thinking of substituting some of the all-purpose flour for a little almond flour next time. If you try this idea before I do, please let us all know how it turns out. If you’d like, you can even add some natural peanut butter, or other nut butter, to the top/middle of the batter for a Reese’s Peanut Butter Cup flavor. This cake turned out so well – moist, rich, and chocolaty! Ever wonder what makes German chocolate cake so creamy and moist? It’s the buttermilk, as well as butter and sugar. A gluten free German chocolate cake recipe uses the same exact ingredients as a traditional one, except for the flour, and the brands of certain ingredients. German chocolate is very sweet. I use a mixture of good bittersweet chocolate and cocoa powder instead. In addition, traditionally it is made with 3 layers; this is 4, or you can make just 2 layers (and use less frosting). A couple of years ago I created a Gluten Free Brownie Recipe, but I wanted to ensure that I addressed the needs of those who are dairy-free, as well. Therefore, I created this gluten free dairy free brownies recipe. Now that I have, I must say, these turned out incredible! I hope you enjoy them as much as I did. Gluten Free Pumpkin Cheesecake Filled Chocolates

It’s not only trick or treat time for the kids, but us adults desire treats, as well. Imagine sweetened cream cheese, pumpkin, and graham crackers. What do you get? Pumpkin cheesecake! Then wrap them in chocolate and you get heaven in ball! Alternatively, instead of using ground gluten free graham crackers you can ground chocolate cookies. You can make these pumpkin cheesecake chocolates elegant by topping with candy pearls, drops of colored chocolate or another variety of chocolate, or dip the tops in a second color of chocolate. Sugar-Free Gluten Free Chocolate Parfait

I’ve had several requests for gluten free, Jello instant pudding recipes as well as sugar-free ones. I do not advocate the use of sugar-free jello instant pudding, as it contains aspartame, which is a known cancer causing sweetener. To make this parfait with Chocolate Sugar-Free Fat-Free Jello Instant Pudding it will contain 8 grams of carbs per 1/2 cup. My suggestion is to make my No-Cook Gluten-Free Dairy-Free Sugar-Free Chocolate Mousse, which is pudding-like, and it uses avocado, a healthy fat, and is sweetened with dates. It also does not contain any chemicals or artificial dyes like the package pudding. Nor does it taste bitter. If you’d like to make the no-cook pudding with lower glycemic levels try substituting the dates with a little agave nectar/syrup. Gluten Free Chocolate Mousse without Cream

For Father’s Day I made my husband one of his favorite desserts, chocolate mousse. This gluten free chocolate mousse recipe is no different than a regular version accept for the use of gluten free chocolate. There are several ways you can make chocolate mousse: with heavy whipping cream, with egg yolks, and with egg yolks and butter, but I decided to go with egg yolks and separated egg whites. I allowed it to chill for about 6 hours and it wasn’t light enough for our taste buds, but 2 days later it was wonderful. And I’m sure it would have been lighter on the third day. Chilling for days is one of the keys to making this version lighter, and the use of egg whites is the other. I used semi-sweet chocolate morsels for the one in the photo, but natural dark chocolate is my favorite. And the photo represents only one day chilled. Enjoy. Mascarpone Filled Gluten Free Cannoli Dipped in Dark Chocolate

I saw some regular cannoli in a bakery decorated so elegantly that my first thought was that I just had to make a gluten free version! They were filled with mascarpone cheese, which is a sweetened Italian cream cheese. The one thing I will never order in a bakery is pre-filled cannoli, as sitting there just makes the cannoli shell soft. Ordering ahead of time is the only way to go, but making them from scratch is even better. If you’re considering skipping the chocolate dipping step, consider that when dipped in chocolate cannoli  stand up properly, instead of rolling over when served or displayed.
