As many of your know, May is National Celiac Awareness month (and gluten-free awareness) . I was asked to contribute a gluten free cupcake recipe for the Cupcakes for a Cause event sponsored by the ACDA (American Celiac Disease Alliance). The number of cupcakes I needed to represent the number of years that I have been gluten free. Well, that seems simple enough, but because I fell off the wagon, so to speak, it hasn’t been quite 7 years, but that’s what I went with because that’s what I celebrate, the moment I found truth, gluten isn’t good. Chocolate Gluten Free Caramel Sauce

The consistency of this gluten free caramel sauce is much like the hot fudge for ice cream you can purchase in jars. However you may heat it and thin it out with additional milk, if desired. It calls for my gluten free dulce de leche recipe (thick, rich caramel sauce), but you can also purchase dolce de leche already made. Hershey’s makes one that is gluten free. Once you have your dolce de leche made or purchased, this chocolate caramel sauce may be made, literally, in one minute. Someone once said that the only thing they would trade chocolate for is dolce de leche. Well, I wish they could taste this. It’s heaven on a spoon! Gluten Free Chocolate Ganache & Dark or White with Dairy-Free Options

On a gluten free diet or any diet for that matter, there’s nothing more decadent than gluten free ganache! Fortunately, it is naturally gluten-free, as long as you use gluten free chocolate. It is made from chocolate, whipping cream, and vanilla. You may use ganache on any of your gluten free dessert recipes, or prior to cooling, while it is still thin, (or you may thin it out with additional whipping cream use it as a sauce for plating purposes. It makes a heavenly glaze for cakes, brownies, ice cream, donuts, and more, or allow it to harden some and use it as a frosting. Gluten Free Chocolate Peanut Butter Cookies

My first thought when seeing these gluten free chocolate peanut butter cookies was, “Got milk?” And then when I tasted them, my first thought was “OMG! – to die for!” My second thought was “Got milk?” They are chewy, right out of the oven and crisp up a bit upon cooling. And since this gluten free cookie recipe does not call for milk, it is completely dairy-free, if using dairy-free chocolate chips. For those with peanut allergies, substitute the peanut butter for almond butter, or the nut butter of your choosing. For nut and peanut allergies, substitute it with Sunbutter. Gluten Free Chocolate Cake Recipe with Caramel Sauce and Nuts

I get a lot of requests for a gluten free chocolate cake recipe. And I had run across a recipe for caramel sauce which made me think of a cake recipe my sister used to make. It had a caramel-like sauce and walnuts placed beneath a chocolate cake batter in a bundt pan. Often some of the caramel and nuts would stick to the pan, but it was so so good! I wanted to convert this to a gluten free chocolate cake recipe, but she has lost the recipe. I’m sure she’ll find it one day but stored it away once the caramel sauce wasn’t turning out right. Chocolate Sugar-Free Gluten-Free Donuts Doughnuts (Baked)

These are my favorite gluten free donuts, chocolate, chocolate and more chocolate! I had run across the cardboard wrapper that surrounded my donut pan and had been craving them, as I see it quite often. My husband’s favorite type of donuts are chocolate, and he’s coming home today from out of town. I thought what better way to greet him than have chocolate gluten free donuts awaiting him? Well, the first batch I forgot to add the milk, which caused them to be too dry. They already had been placed in the oven when I realized it. Gee, where was my mind that day? Chocolate Chili with Bacon (Gluten Free)

Gluten Free Chocolate Chili

You heard it right, chocolate chili! I also threw in some bacon. I love to keep my guests guessing what the ingredients are in this chili. My daughter made a similar chocolate chili recipe, and she won an award for it. Unfortunately, for me, it contained tomatoes. Being allergic to tomatoes, I created my own chocolate chili recipe, gluten-free of course. You can top this chili with cheese and/or gluten free bacon bits. I over cook some bacon to garnish the top and then add additional juice from the chili on top. It gives it a nice sheen, yet leaves the crunch for added texture. Chocolate Bowl Recipe (Gluten-Free) with Chocolate Mousse

I had ordered some chocolate dessert molds and some chocolate candy molds so that when I went to visit my grandkids we’d have something fun to do. I wanted to show the family that gluten free desserts can be delicious, too. We made chocolate bowls filled with mousse. The gluten free chocolate mousse was from a packaged that we doctored up. And we topped it all off with a chocolate candy. Yum! However, we used too large of a size mold, and it was just way too much chocolate for some of us. Though some of us die-hard chocolate lovers finished every bite. I suggest a little smaller size, though any size would make wonderful gluten free desserts. You can even fill them with fresh fruit.
