Gluten Free Zucchini Casserole

I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could!  That just sounds so yummy! You can eat this as an entire meal. I did, and enjoyed every bite! I hope you do, as well!

Yield: Makes 4 servings

Gluten Free Zucchini Casserole

My favorite way to eat zucchini. So delicious and flavorful!

Ingredients:

  • 4 zucchini, ends trimmed, sliced length-wise and thinly sliced
  • 1/2 yellow onion, chopped or sliced thinly
  • 2 Tablespoons extra virgin olive oil
  • smoked paprika (optional)
  • Parmesan and Romano Cheese, grated (or nutritional yeast) (optional)
  • Oil and preheat frying pan.

Instructions:

  1. Preheat a large skillet with olive oil spray, about 12 sprays, over medium-high heat.
  2. Add zucchini and onion; sauté and stir often until it browns a bit, about 4 minutes.
  3. Lower heat and continue to saute until it reaches your desired tenderness, about 4 additional minutes. If desired, just before it is done, turn up the heat to brown them a bit more.
  4. Sprinkle with paprika, if desired, and stir.
  5. If your diet allows, top each serving with about 1/4 teaspoon grated Parmesan cheese.
