What can I say in a review about Mediterranean Snack Food Company’s Baked Lentil Chips? – not much, accept they are gluten-free and I am addicted to the Sea Salt Cracked Pepper! Perhaps it’s the spiciness of this chip which causes me to not stop eating them. Not all flavors are spicy, though.  Thank goodness they only sent me one bag of the Cracked Pepper! The scale would tell on me! However, they are baked, not fried, with only 110 calories for 22 chips and the chips are pretty thick, like corn chips! So, enjoy! Is Rice Dream Gluten Free?

While at the Gluten Free in Fresno Support Group meeting at Whole Foods on Wednesday, January 26, 2011, I heard from a couple of members that they assumed Rice Dream milk is gluten free because it said so on the label. At that time I believed it not to be safe for celiacs, as they use a barley enzyme in their manufacturing process. And though they said it was processed out, anyone with a gluten intolerance may be afraid to risk it. At that time there was no testing done on the product, or at least it wasn’t publicized. Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Happy Thanksgiving to All!

I wanted to take the time to wish you all a wonderful and happy Thanksgiving! I appreciate all your support.

Every Thanksgiving I think back to 1981 when I cooked my first holiday dinner, all by myself. Well, perhaps not all by myself! I did have two older sisters who were in the kitchen non-stop to make sure I did not mess anything up. I found it a bit difficult to learn when they were doing everything for me, year after year, but what are sisters for? Right?

Finally, one day my mother handed down her Joy of Cooking cookbook to me. She did not like it, as she always depended upon her Betty Crocker cookbook for everyday recipes. Once I had the Joy of Cooking in my hands I was able to branch out on my own. I think the first thing I made from that cookbook were cream puffs. Yum! The puffs came out wonderful, but I wasn’t too fond of the custard. I wanted to duplicate the custard in the cream puffs from Victoria’s Bakery in San Francisco. Unfortunately, no luck there. Gluten Free Navy Beans

A gluten free navy beans recipe just like my mother used to make. The only difference is that she used to add a little tomato sauce for color and flavor. I used a little tomato-free gluten-free chipotle sauce. This is a great recipe to make and freeze individual portions for those busy days and nights, or just when you’re too tired to cook. Gluten Free Chicken Biryani (Indian Chicken with Buttery Rice)

This version of chicken biryani (Indian chicken recipe), is made with ingredients that you can find at your local grocery store and is a naturally gluten free recipe. I used to work near a restaurant that had the best Indian food ever. I miss their butter chicken, but cannot find a recipe which can even come close. I must say that this recipe is not butter chicken, however, it is buttery and I like it almost as much. It takes quite a bit of time to make, but the rice can be made in advance which is very convenient, especially if you are having guests. Enjoy this treat. I sure did! Gluten Free Porcupine Meatballs Without Tomatoes

My mother-in-law used to make porcupine meatballs in a red sauce. All her kids miss it so much, especially my husband. Because of my tomato allergies I decided to see if a similar recipe would work with a brown gravy. This is naturally gluten free, but you need to be careful to use gluten-free ingredients in the sauce, which I explain below. Mom used to use instant white rice, many people use uncooked long grain white rice. I used cooked brown rice, as I had some left over already in the frig. Brown gravy just does not have any flavor unless you make it from some sort of meat base or fat. I didn’t have any meat fat on hand and decided to spice up the roux (flour and butter mixture) with a little sauteed onion. It worked pretty good!
