Gluten Free Pizza Dough Recipe Bread Machine

I understand that many of your have had trouble making gluten free bread in a bread machine. One thing that is easy to make in a bread machine is gluten free pizza dough. If you don’t own a bread machine, you may visit the Gluten Free Pizza Crust Recipes category for recipes calling for a mixer or a food processor. Though I had to help during the kneading processor, the dough is easy to handle and roll, if desired. I’m thinking that using a food processor fitted with the dough paddle, or even a standard blade may work. My new KitchenAid 13-Cup Food Processor comes with a plastic blade which is great to use for dough. If you don’t have such a tool on your food processor, use the standard chopping blade. Of course, the next time I make this pizza dough, I’ll attempt to improve it so helping is not necessary. I hope you enjoy it for now! Continue reading “Gluten Free Pizza Dough Recipe Bread Machine”

Gluten Free Apple Rings

Image: Gluten Free Apple Rings

In a mood for a healthier alternative to donuts? These gluten free apple rings may just fit the bill. Rather than starch filled donuts, these fritter-like rings are filled with the natural sweetness, nature intended. The batter is lighter and crunchier than my Gluten Free Fruit Fritters recipe; skipping the butter, milk, egg whites, and baking powder, and replacing all with sparkling water. Though the batter is thinner, it can be made thicker simply by adding an additional tablespoon or so of rice flour. Top them with powdered sugar or an apple cinnamon caramel sauce (recipe included). Gluten Free Bread Machine Recipe: White Bread

Gluten Free Bread Machine Recipe for White Bread

In preparation for summer, I decided to start working on a gluten free bread machine recipe, and I’m so glad that I did! I have on old version of the Breadman Ultimate, Model No. TR2200WWC, similar to the TR2200C. If I recall correctly, I purchased it around 2004, well before they made bread machines with a gluten free cycle. One thing great about the Breadman Ultimate series is that they are programmable so that you can skip steps or set the length of time, i.e., the first and second kneads, shape (punch), bake and rise, even add ins. If you have a newer model, perhaps it will turn out well using the gluten free cycle. Continue reading “Gluten Free Bread Machine Recipe: White Bread”

Are Gumdrops Gluten Free? + Recipe

Image: Gum Drops

Since today is National Gumdrop Day, I thought it was the most appropriate time to answer this question. Yes. Jelly gumdrops are gluten free. Of course, some manufacturers may make gluten containing products on the same manufacturing lines. Therefore, you are gluten intolerant you may wish to contact the manufacturer to find out specific details. Years back I read that Walgreen’s brand of gumdrops were labeled gluten free. I really like the idea that Trader Joe’s citrus gumdrops are free of artificial coloring and flavoring. So, this coming Easter, you may fill baskets with the gumdrops of your choosing. Just make sure to check labels for gluten ingredients, just in case. You can even make your own using this Gum Drop Recipe. Continue reading “Are Gumdrops Gluten Free? + Recipe”

Gluten Free Lava Cake – Molten Lava Cake

Image: Gluten Free Lava Cake

Lava cake is the perfect dessert for 2, especially on Valentine’s Day! It is known by several other names: chocolate lava cake, molten chocolate cake, fondant, chocolate fondant, fondant pudding, chocolate coulant, coulant au chocolat, and chocolate moelleux. This gluten free lava cake is made no differently than its gluten cousin. You only need to ensure that you use gluten free chocolate. For best results use dark or bittersweet chocolate. The best way to melt chocolate is to use real chocolate, versus chocolate chips. My favorite is Scharffen Berger Bittersweet 70% cocoa, the thick 9.7 oz. bar. It’s gluten free. When dusting the ramekins with flour and cocoa, be sure to also use a gluten free “pure” cocoa powder. I like using Rodelle’s Dutch processed cocoa, as it is less bitter than regular unsweetened cooca powder, and darker in color. Meanwhile, I hope you enjoy this decadent recipe. Perhaps you can make it tonight. It’s fairly easy, and you may just have all of the ingredients on hand. Happy Valentine’s Day to you all! Continue reading “Gluten Free Lava Cake – Molten Lava Cake”

I don’t know about you, but I have been consuming way too much rice lately…rice pasta, rice flour in baked goods, rice as side dishes, and more. I thought you would appreciate more gluten free potato sides dishes, and this easy potato salad recipe is so fast to make if you use a microwave. This recipe is especially great to make for one individual or multiply to feed a crowd. If you desire, you can make this recipe much richer by substituting mayonnaise or sour cream for the olive oil. They’re all delicious! Continue reading “Easy Potato Salad with Dill (Naturally Gluten Free)”

Duchess Potatoes (Naturally Gluten Free)

Image: Gluten Free Duchess Potatoes

Duchess potatoes, also known as duchesse potatoes, are a French dish, pommes de terre duchesse, consisting of seasoned mashed potatoes, made stiffer than traditional mashed potatoes, with the addition of egg, in this case, egg yolks. They are piped using a piping bag or device, and browned just enough to accent the design. Most recipes call for heavy whipping cream, however, my recipe below is a lower-fat version, and may be made dairy-free. Now you’re the duchess. Enjoy Continue reading “Duchess Potatoes (Naturally Gluten Free)”

Gluten Free Apple Strudel

Gluten Free Streudel Recipe

Again, I am honored to be able to create a gluten free recipe for KitchenAid. Today I present an amazing gluten free apple strudel, made with the new KitchenAid 13-Cup Food Processor with ExactSlice System. The strudel is absolutely amazing, as is the food processor! It’s right up there with my KitchenAid Stand Mixer. It has the ability to slice in 6 different thicknesses; works at 2 speeds; has 3 different sized openings to feed food items; comes with an adjustable slicing blade, as well as a shredder and dough blade (for yeast dough); is accompanied by several attachments, all in its own little carrying case/box. The best part…it has a separate chef bowl, with its own sized blade, which enables you to mix or prepare one food, while keeping the main bowl clean for your next food item. Heaven! When KitchenAid made this product, they read my mind! – and yours too, I bet.

UPDATE: I now use my Gluten Free Puff Pastry Recipe for the dough in this recipe. It is divine! See the below updated recipe as well as the updated photo.
