You may have read in my post, “Celiac: Foods to Avoid” (a list of foods that are unsafe on a gluten-free diet) that some food items containing smoked flavoring may contain barley, as barley malt is sometimes used to captured smoke from the wood. It is mostly used in some beers and whiskey. Usually in the U.S. liquid smoke is gluten-free. Gluten-Free Breaded Zucchini Kabobs
My best recipes are created when I am hungry, and this one is no different. My husband and I loved these broiled, breaded, gluten-free zucchini kabobs! Making them as kabobs just dressed them a bit more, but you can definitely make them separately by using toothpicks instead of kabob sticks. Gluten-free Giveaway and Review: Tropical Traditions Virgin Coconut Oil
In addition to my gluten sensitivity, I have had allergic reactions to many coconut products. Therefore, I was hesitant on testing this product, but lo and behold I had no reaction at all to this product! The probable reason? I read that many people who have food allergies may not have an allergic reaction to a food when consuming their organic version. Avoiding chemicals, artificial ingredients, etc. is supposed to help those with food allergies. Tropical Traditions Gold Label Virgin Coconut Oil is not refined. The coconut is shredded (wet milled); cold pressed using the water from the inside of the coconut to make coconut milk; allowing it to sit for about a day to allow the oil to naturally separate from the milk; and then naturally separating the oil from the milk. Katz Gluten-free Giveaway and Review
Katz Gluten Free, known for their scrumptious certified gluten-free breads and baked goods, came out with 2 new yummy treats in December! They added a vanilla flavor to their unique Rugelach. They also introduced Frosted Chocolate Cupcakes. They were generous to sponsor a gluten-free giveaway in exchange for my review of their products. My Katz Gluten Free products arrived with a sticker stating to freeze upon receipt. That is exactly what I did! That was at about 3pm.

At about 7:30 I realized I hadn’t eaten dinner yet and was frantically looking for something fast to make. I thought, “Ground beef defrosts fasts, and oh yah! – I have gluten-free hamburger buns in the freezer! I took a bun out to defrost on the counter while I whipped up my favorite gluten-free burger recipe. I did not even have enough time and energy to make the balsamic reduction. I just whisked the balsamic, chipotle sauce and brown sugar together and combined with the red onion. No need for ground oats this time, as I had a nice filling hamburger bun awaiting! Perfect timing – it was defrosted by the time my hamburger was done!
Gluten Free Cookie Recipe: Almond Chestnut Chocolate Chip
I received a quart of Tropical Traditions coconut oil to review and just had to test it out with a gluten free cookie recipe. I ran out of almond flour and added a bit of chestnut flour, but I think you can use all almond meal if you prefer. Great cookie, if you like coconut! – almost like macaroons! New Gluten Free Products 2011
Last weekend I was fortunate enough to attend the Natural Foods Expo West trade show. Not only does the show include gluten free products, but vegan, raw, organic and other non-food natural products. It was wonderful to see all the new gluten free products from the gluten free manufacturers, as well as the additions from longstanding manufacturers who added gluten free products to their lines. Honey Containing Malt Sweetener
We would all assume that all honey is gluten-free, but on March 11, 2011 the The U.S. Department of Justice announced in a press release that they seized 10,560 gallons of counterfeit honey from Hong Kong, falsely labeled honey made in Thailand, but was actually made up of mainly compound malt sweetener. The sweetener was originally shipped to Wisconsin in 2009 and then eventually shipped to the Mid West with Chinese custom stickers removed. The investigation was formed by the U.S. Attorney’s Office in Oregon, the U.S. Attorney’s Office in Chicago and the Department of Homeland Security. Continue reading “Honey Containing Malt Sweetener”
Gluten Free Zucchini Casserole
I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could! That just sounds so yummy!
