How the does gluten-free diet fit into International Women’s Day and Pancake Day (also known as “Pancake Tuesday” and “Shrove Tuesday”?

Today is the day before the 40 days of Lent begins, a time for Christians and Catholics to begin fasting (eating less rich foods that give pleasure, in sacrifice).  Pancakes are associated with the day before Lent because they are made from rich foods such as meat, egg, milk and sugar, actually a healthy choice!

Gluten-Free Basil Grilled Cheese Sandwich

Gluten-free Grilled Basil Cheese Sandwich

Mid business taxes, and in a rush for a quick lunch I popped my head in the frig for a quick gluten-free sandwich and saw some cheddar cheese. I haven’t had a grilled cheese sandwich in a couple of years, but just didn’t want a plain one, but one more on the style of California cuisine. I pictured sautéed onion and roasted peppers, but no time for that! I decided to spread my bread with some basil paste and layer each slice with cheddar cheese and plop it in the frying pan. Great and fast! I loved it, but did miss the sautéed veggies! Just remember, a gluten-free grilled cheese sandwich doesn’t have to be plain. Add any of your faves, including meat, such as chicken, bacon, etc. If you’re in a rush, this one is sure to please!

Gluten-free Italian Sausage Pasta Casserole

I needed to do a review for Schar’s pasta for my gluten free gift baskets website and decided to create a new gluten free pasta casserole recipe just for the occasion! What’s more Italian than pasta and Italian sausage ? My husband and I not only enjoyed the dish, but Schar’s tagliatele pasta, as well. The pasta contains mainly corn and tastes much like regular, glutenous egg noodle pasta.  It was a real treat!  If you do not eat corn, then by all means use a gluten-free brown rice pasta. Wanting to experiment with new gluten-free flours and grains, I picked up some of Bob’s Red Mill organic amaranth flour and amaranth grains to create a new gluten free cookie recipe. I have been wanting to find a healthy snack besides premade protein bars, and amaranth (a seed) is rich in protein (15-17% by weight). Compared to other grains, it is the richest in lysine and the highest in fiber (3 times wheat). It is also loaded with vitamins and minerals. Gluten Free Oat Bread Recipe with Cinnamon and Cranberries

Gluten-free Cranberry Oat Nut Bread

My husband loves raisin bread, but I haven’t made him any since I have been gluten free. He used to make his own using the bread machine. I wanted to make him a gluten free oat bread recipe with raisins this morning, but I was out of raisins (used them in the gluten-free oatmeal cookies I made for him last weekend). I don’t care for raisins anyway, so I used dried cranberries instead. Oh! – it turned out so good! My hubby was very pleased, as well. I’m looking forward to adding walnuts next time, though the hubby is not a big nut fan. I also used Expandex® in this recipe, but you can make it without the Expandex by substituting additional oat flour. However, it will come out a little heavier. Perhaps adding an additional egg white may help, too, if you skip the Expandex. I can picture a chicken or turkey sandwich, possibly with cream cheese. Yum! It also makes a great snack!
