As a gluten-free dieter one can eat just so much rice. That leaves potatoes! My mother used to make this dish for us for years on end. I hadn’t cooked it in years myself, but had all the right ingredients. She used to use beef and green bell peppers, but since I only had yellow, orange and red that is what I used. This used to be one of my husband’s favorites. I suppose I stopped making it as we got older and started watching our sodium content. We used to pour on the ketchup when we were younger. Gluten Free Sauteed Napa Cabbage
I have been doing very well on my gluten free diet; yet another gluten free meal! I had a Napa cabbage in my frig waiting to make another batch of gluten free potstickers, but never got around to it. I did not have another Napa cabbage recipe and thought that sauteed Napa cabbage would be a way to make a quick meal. My intention was to eat it all up as a main dish, without adding anything to it, but I was starving and because of the tamari sauce it really needed to be served over rice, which was perfect. So, I thought since I had leftover roast, already sliced, why not add some of that in, as well. It was great! You can keep this recipe vegetarian/vegan, but I am sure it would be fantastic with chicken or pork (chops or bacon), as well, or over rice or noodles, plain! Gluten Free Asparagus Prosciutto Risotto
On a gluten free diet many of us eat a lot of rice. Gluten free risotto is a nice change. I am getting tired of the same old rice dishes and wanted to mix things up a bit. The only risotto recipes I have taste-tested were in fine Italian restaurants, but never cooked it myself. Imagine that! And I’m half Italian! Our family always ate the same asparagus recipe, boiled, and dipped in mayonnaise while eating. Traditional risotto includes parmesan cheese cooked into the rice. It makes it creamier, though it is pretty creamy alone because of the starch content of the arborio rice. Gluten Free Cucumber Salad with Creamy Dill Salad Dressing
When I visited Los Angeles in the past, I loved going to a this little hole in the wall Greek restaurant that served a great cucumber salad with a creamy dill dressing. I had to recreate it! I don’t know why I didn’t years ago. It is wonderful! I did however use green onions instead of yellow onions and I like it much better! They did not use carrots, but I like a little color once in awhile. You can use a gluten-free Greek yogurt or sour cream. Leftovers taste even better! Gluten Free Italian Sausage Stuffed with Mashed Potatoes
One of my husband’s favorite dishes is mashed potatoes and cheddar cheese over Italian sausages. It is a great way to use up mashed potatoes. It is not something either of us can afford to eat very often, as far calories are concerned, but 3 or 4 times a year I make this special treat. It’s right up there with pizza for us! I was not planning on posting this recipe, but snapped a quick photo anyway (before the cheese melted), and then later decided why not! Kids love sausages and adults. My mother used to make it for our family for years. When she decided to start cooking low cholesterol dishes she started broiling the sausages, cutting back on the grease. Most fried rice recipes are gluten free until someone places soy sauce in it. This gluten free beef fried rice recipe calls for tamari sauce, a gluten free soy sauce. And I’ve provided a link to a brand that is labeled gluten free. Fried rice is easy on the pocketbook, as the egg is added protein and the rice stretches the meal, all allowing you to use less beef. Gluten Free Potato Pancakes for Breakfast
Though this Potato Pancake Recipe was posted previously, I thought I would share it with you as a gluten-free breakfast or brunch idea. There are a number of fillings you can use for potato pancakes. My favorite is cheese, but I usually eat them plain or with a little butter on top. Whether serving a crowd or just a few people, nachos are always a big hit. Gluten Free Agave Popcorn Balls
Recent time spent with my grandchildren got me to thinking of my childhood. I remember eating pink caramel popcorn. Remember that? All that sugar just seemed wonderful, and the artificial coloring made it very attractive! Fortunately, now, most people are gearing up towards healthier choices. No more red dye no. 40 which contains petroleum and less refined sugar. I decided to try a popcorn ball recipe sweetened with agave syrup.
