Gluten Free Hot Cross Buns Recipe
Adapting my Whole Grain Gluten Free Dinner Rolls Recipe, enabled me to whip these gluten free hot cross buns up in no time. While the dough rose, I was able to make a delicious dinner. This gluten free hot cross buns recipe only takes about 10 minutes to bake. It all worked out perfectly and it can for you, too. These are so much less work than making Fluffy Gluten Free Cinnamon Rolls, though I enjoy those, as well.

Gluten Free Vegan Granola Recipe
Nature’s Path sent me a couple of boxes of their new Qi’a Hot Oatmeal in Creamy Coconut flavor. I don’t usually enjoy coconut in my oatmeal; therefore, I had to find another use for it. I love coconut in granola and used it for that. I also usually use plenty of superfoods in my granola. This was so easy to make because Qi’a Hot Oatmeal already contains many of them. Easy Gluten Free Scalloped Potatoes Recipe in Crispy Cups
I made these last weekend and my husband and I thought we died and went to heaven. We don’t usually react this way unless something contains bacon, but these scalloped hash brown potato cups are truly to-die-for. The creamy potatoes with their seasoned and crisp bread crumb coating is incredible. Using frozen hash browns makes this recipe easy. I don’t think I’ll make my traditional gluten free scalloped potatoes recipe again. I’m looking forward to baking these ahead of time and then baking them again to rewarm for guests. This will make them extra crispy. Enjoy!

Gluten Free Oatmeal Protein Shakes Recipes (Dairy Free)
The other day, I needed a fast, healthy, light lunch. I waited too long to eat lunch and didn’t want to ruin my dinner. My first thought was protein shakes, but I didn’t have my go to fruit, banana. Being out of them, I reached for some frozen blueberries instead. But how was I going to get full on those? Well, I found a fulfilling source of protein, oatmeal. Oats are the highest protein gluten free grain. I used a packet of Nature’s Path new Qi’a Hot Oatmeal in the Creamy Coconut flavor. The coconut flavor was overpowered by the blueberries, but it still tasted wonderful and was the perfect low-cal, healthy choice. The added grains, seeds and fiber makes it more flavorful and healthier. Plus I love anything that has a bunch of ingredients in one package. Four-Cheese Gluten Free Quiche with Leeks & Bacon
I had some leeks in the frig that were crying out, “Use me before I go bad.” You can make this gluten free quiche with crust. However, if you are watching your carbs, skip the crust and just oil the pie dish and bake the filling. The cream, bacon and cheese are low in carbs. The filling is incredibly moist and flavorful.
