This recipe is nothing like Yeast-Based Gluten Free Beignets (the ones that are popular in New Orleans, usually made from biscuit dough). Instead, they are Gluten Free French Beignets, popular in France. This dough creates light and airy pastries that have a marshmallow-like texture inside the shell, similar to churros. Gluten Free Chocolate Pecan Scones

 When I saw the gluten version of this gluten free chocolate chip pecan scone recipe, I just had to create a gluten free version. The scones may be made dairy free (as I did), vegan, or with dairy. No matter which way you make them, they are rich and delicious. Serve at a holiday brunch, Sunday brunch, or just because. I made them in advance for Thanksgiving breakfast as they freeze well. Their moist texture and rich flavor make them a raving hit!

Gluten Free Whipped Porridge

Gluten Free Finnish Porridge

Whipped porridge is a Finnish tradition and is normally made with farina (cream of wheat used to make cereal or pudding). Traditional versions contain homemade juice from tart berries like lingonberries, red currants, or cranberries. I chose readymade cranberry juice because cranberries are low in Ph but high in pectin, which provides stability/structure for whipping to hold its peaks.
