Gluten Free Cranberry Nut Muffins
A little red for a gluten-free Valentine’s Day recipe! These gluten-free cranberry muffins were made without nuts, but I often leave out unnecessary ingredients when testing a recipe for the first time. I am a walnut lover, among others, and really missed them in these muffins. It would have really made a better flavor. Next time I plan on adding an egg yolk, as well, just to add more yellow color. Gluten Free Beef Faijitas
This gluten free beef faijitas recipe is one of two faijita recipes on this site. You can compare it to the other faijita recipe to decide which you would like best. Either recipe goes great with homemade gluten-free tortillas. This one is close to the Chili’s knock-off recipe, but no marinating needed and the ingredient amounts are different, as well as vinegar as a substitute for lime juice. You can use any color peppers you wish, but definitely add in some green along with other colored peppers. Gluten-Free Steak Marsala with Onion and Mushrooms
One of my favorite entrées is chicken or veal marsala. I had the craving, but no chicken or veal in the house. Oh my! Onto another experiment I went…and here it is, steak marsala, gluten-free, of course! After making the test recipe for just my husband and I, we had a guest over and I made it again. Gluten Free Stove-Top Chicken Potato Casserole
This one dish gluten free casserole is very easy to make! Rather than wait 1 hour in the oven to bake chicken and potatoes, you can cook it on the stove top in 15-20 minutes, depending upon the size of your potatoes. And you can leave the skins on the potatoes if you desire, which speeds up the prep work. I appreciated this recipe because it uses only one pan. To my surprise, as I am not usually one to eat chunks of onion and especially garlic, they turned out so sweet in the dish! I hope this makes your gluten-free dinner meals faster and easier! Gluten Free Beef Stew Chili
This gluten free beef stew recipe is actually another one of my gluten free chili recipes without tomatoes, (due to my allergies). Some assume chili is naturally gluten-free, but if you use a package chili mix it may very well contain wheat gluten. This chili recipe is thickened with potato starch, though you may use cornstarch, if that is all you have on hand. You may also add tomatoes to this recipe, if you wish, which will sweeten it up a bit, or you can sweeten it with sugar, agave nectar, stevia or a combination of any of these. It is wonderful over baked french fries, which is how I used it, or you can top it over baked potatoes or rice. It is only a tad spicy, so if you like it hot, spice it up a bit more using additional cumin and chili powder. The worcestershire sauce gives it more a beef stew flavor, therefore, if you desire more a chili flavor, just skip it or add more chili powder. Enjoy! Continue reading “Gluten Free Beef Stew Chili”
Gluten Free Taco Pizza with Udi’s Gluten Free Pizza Crust
I received a couple of Udi’s Gluten Free Pizza Crust to review. Because I am allergic to tomatoes, I often end up having a no sauce pizza or a pesto pizza. This time I came up with a sauce I can have, taco sauce without tomatoes! Why didn’t I ever think of that before, I do not know why! My husband tasted my pizza and liked it better than his! This recipe is much lower in sodium than most pizzas, too! Udi’s gluten free pizza crust made it delicious, as well! Now when you don’t have time to make your own gluten free pizza dough, you know what to buy.

Gluten Free Pesto Mashed Potatoes
A month or so ago, I went to an Italian restaurant where I was served pesto mashed potatoes and it was one of those hitting my forehead type of moments, “Why didn’t I ever think of that?” They were fantastic, but lacking in butter. Perhaps they used olive oil only. They had just a hint of garlic and basil, not overbearing as you may expect. It didn’t taste like pesto pasta, nor garlic mashed potatoes, but a unique, flavorful mashed potato. I was able to duplicate the recipe, and wanted to share it with you, though my version has more butter than theirs. Rich, decadent and creamy! Low-Sodium Gluten Free Bread Made with Expandex
Looking for a lighter gluten free bread recipe? The first time I made my gluten-free oat bread recipe I used non-fat milk. This time I used water, less salt, and replaced 1/4 cup of the oat flour with 1/4 cup of Expandex. It has the texture of real white bread, but just slightly heavier because it is moister; has a little heavier crust, and is made with oat flour which is a heavy flour. It makes a wonderful gluten-free sandwich bread! When warm or just cooled it has the texture of white bread. Once it cools completely it has the texture of sliced sourdough bread.
