Gluten Free Oat Bread

I created this gluten free oat bread recipe to test out Cream Hill Estates’ Lara’s Gluten Free Oat Flour, but oat bread is already one of my favorites.  Oats are known to lower cholesterol, as well.  In a gluten-free diet we need fiber wherever we can get it, therefore, this is a good choice in a gluten free bread.  It is of medium weight, not as light as I wished for, but I will work on perfecting this recipe.  It is moist, though, which is what I was hoping for.  Enjoy!

Gluten Free Tuna Melt

I have never had a tuna melt before, but decided I could make a gluten-free tuna melt without cheese!  Of course, you can add cheese, if you desire. I wanted to add fish to my diet. I really do not like fish very much. I suppose there is a little child still left in me! Gluten-free Meatloaf Muffins

A friend of a friend shared this recipe with me, but I had to alter it to make it gluten-free.  It can also be made dairy-free, if necessary. I added an alternative sauce, too! You really can use any sauce you like: spaghetti, Alfredo, pizza, brown gravy, etc. You also can add sauteed onion for additional flavor, especially if not using any sauce at all. You can remove any ingredients that you do not think children may enjoy. I hope you find this recipe useful. It is great for freezing, too! You can defrost as many as you need and reheat. Seasoned Gluten Free Croutons

I am about to make a meatloaf muffin recipe that calls for Stove Top stuffing mix. Since Stove Top does not make gluten-free stuffing I am making my own homemade seasoned gluten free croutons recipe. You can use these croutons in gluten-free stuffing, as well, with or without the seasonings. I hope you find this recipe useful. My husband who gladly uses gluten croutons, likes these better! Gluten Free Pigs in a Blanket

This recipe is not technically gluten free pigs in a blanket, but gluten-free sausages in a blanket. It uses my gluten-free biscuit recipe. I learned while making them that the blankets need to be larger than 4″ in order to prevent from popping open, perhaps enough to overlap at least an inch. I would also suggest trying some egg wash (beaten egg) between the overlapped layers to keep them closed. You just have to make sure that the sausages are not hot while wrapping them. Gluten Free Spicy Indian Fries

I have been on a spicy food kick lately. Can’t explain it, but these gluten free french fries hit the spot! I have been really enjoying experimenting with cultural food. I never thought I would ever eat spicy fries, but I loved these! This gluten free recipe was inspired by a recipe in Food and Wine magazine, and is naturally gluten-free. Gluten Free Raspberry Chipotle Sauce

Recently, I purchased a bottle of Fischer & Wiser Roasted Raspberry Chipotle Sauce that I could not wait to use. Unfortunately, it was made in a facility that manufactures wheat products. I just had to create a recipe for everyone to use that is completely gluten free! Luckily, I had some frozen raspberries in the freezer! I used this gluten free raspberry chipotle sauce as a marinade for steak last night, only marinading for 30 minutes. Then I left the rest of the steak marinade for 24 hours and they were both great, but the 24 hour marinade had penetrated the meat a little bit more, creating a bit more flavor. Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Gluten Free Sweet Potato Puffs

These gluten free sweet potato puffs turned out wonderful! They look like miniature cream puffs. They are more moist inside, though, and without the filling. These lovely little puffs can be served as biscuits or a dessert. If using as a biscuit serve plain or with butter. You can also coat them with powdered sugar to serve as a dessert. I have tried them both plain and with powdered sugar (actually agave powder) and love them both! My hubby wants to try them with butter, but hasn’t yet. He keeps eating them plain. They are not real sweet (but sweet enough) which lends to its versatility. In my last batch I added chopped walnuts. Yum! They tasted close to a zucchini or banana bread. Have fun with these. They are sure to make Thanksgiving special. I can picture them served at brunch, as well. They are also a great way to use up those left over sweet potatoes!
