Gluten Free Protein Shakes with Superfood

The other day, I needed a fast, healthy, light lunch. I waited too long to eat lunch and didn’t want to ruin my dinner. My first thought was protein shakes, but I didn’t have my go to fruit, banana. Being out of them, I reached for some frozen blueberries instead. But how was I going to get full on those? Well, I found a fulfilling source of protein, oatmeal. Oats are the highest protein gluten free grain. I used a packet of Nature’s Path new Qi’a Hot Oatmeal in the Creamy Coconut flavor. The coconut flavor was overpowered by the blueberries, but it still tasted wonderful and was the perfect low-cal, healthy choice. The added grains, seeds and fiber makes it more flavorful and healthier. Plus I love anything that has a bunch of ingredients in one package. Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods

Gluten Free Vegan Oatmeal Cookies

Nature’s Path just came out with three flavors of their new Qi’a™ Superfoods Hot Oatmeal. Flavors include Creamy Coconut, Superseeds & Grains and Cinnamon Pumpkin Seed. I love the Superseeds & Grains because it has a bit of crunch. It contains rolled oats instead of quick-cooking oats like so many brands. They asked me to create a recipe using my favorite flavor for their Pinterest Oatmeal Month (January) contest and here it is, a gluten free vegan oatmeal raisin cookies. They are so good that when I made them (just before dinner), I ate three and couldn’t eat my dinner. It was one of those nights…eat dessert for dinner and a small dinner for dessert. Mind you, I am not on a dairy-free or vegan diet, yet they still met my requirements for a chewy cookie. Enjoy!

This gluten-free dairy-free mashed potatoes recipe is not only easy to make but is delicious; and is made completely allergen-free. They are made without dairy, casein, soy, nuts, or any of the eight major allergens. Instead of peeling the potatoes and cubing them, you boil them whole and the peel just slides off. The main thing is you don’t have to sacrifice on taste. If you are not allergic or intolerant to any of these ingredients, feel free to use butter and cow’s milk. Homemade Gluten Free Sweet Chili Sauce

Sweet chili sauce is a Thai favorite. You can purchase this sauce in bottles. One brand that is gluten free is Thai Kitchen Sweet Chili Sauce. If you’re allergic to tapioca, choose another gluten free brand or make this recipe. It’s easy to make it at home, though; and can be stored for a very long time. (Though it begins to loose its heat after a month or so.) While ginger is not a common ingredient in sweet chili sauce, I provide it as an option in my recipe. Lately, I use fresh ginger in almost all of my Asian dishes. Use this sauce in dips, dipping sauces, and my favorite, Asian Chicken Lettuce Wraps/Cups. I think I’ll start using this as my go-to dip for my Gluten Free Potsticker Recipe. Since it contains no oil, it is low in fat and calories (not carbs). For added calories, use a little salad oil or my new Gluten Free Chili Oil Recipe. Gluten Free Oat Crepes with Chocolate or Chocolate Chips

These crepes are simply amazing! I enjoyed making these gluten free oat crepes by halving the recipe and adding finely chopped carob chips (you can use any gluten free chocolate or chips) to part of the batter. To the other portion of the batter I added 3/8 to 1/2 cup of homemade ganache. Then I used the remaining ganache to spread on some of the crepes, along with peanut butter and sliced strawberries. To die for! What makes these crepes a healthy choice is that they are made without the use of high-carb white starch or gums. All you need is gluten free oat flour or ground oats. Enjoy.

Copycat Recipe: Bob’s Red Mill New Gluten Free 1-to-1 Baking Flour

Have you heard the news? Bob’s Red Mill just released a new product, a gluten-free baking flour that can be used cup-for-cup in your gluten free desserts, without bean flour. They suggest using traditional recipes and substitute the wheat flour/all-purpose white flour with their new Bob’s Red Mill Gluten Free 1-to-1 Baking Flour. I created a copycat gluten free flour, similar to 1-to-1, which also works well in cookie, cake, brownie, muffin, and pancake recipes, to name a few.
