In making gluten free gingerbread cookies, the trick is to have a very stiff dough and chill the dough to prevent spreading during baking. This dough is high in starch, making a soft (a bit chewy) cookie. If you like them crispy, I suggest using a higher rice flour to starch ratio and skip the baking powder. I chose to make a softer gluten free gingerbread cookie because my survey on Facebook resulted in more soft than crispy votes, and I cannot resist a soft or chewy cookie. Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

I had put off developing a soft gluten free dinner rolls recipe, for too long. So, I made it a priority, and I am so glad that I did! I am not a big bread eater, but I just cannot stop myself with these rolls! They are not grainy at all. I have had a few requests for a gluten free fruit cake recipe. I created a lighter fruit cake and lessened the typical amount of sugar, glazed fruit and baking temperature, because I am not a fan of fruit cake, at all, even gluten free fruit cake. The adjustments were perfect, as is this gluten free fruit cake recipe, now, at least for me. Gluten Free Cornbread Stuffing Recipe with Sausage Option

The only gluten free stuffing (some say dressing) that I care for is the kind that has been baked in a bird, whether a turkey or a chicken. However, this gluten free cornbread stuffing recipe is very good, after two attempts, and I didn’t even have it stuffed in a bird when testing it. Of course, a bird’s juices surely provides more flavor. Gluten Free Cornbread for Stuffing or Dessert

Last year I had a request for a good gluten free cornbread stuffing recipe, but I hadn’t created a gluten free cornbread recipe, and never got around to it. So, this year, it is my top priority. Once you have a good gluten free cornbread recipe you can make any stuffing recipe you choose using that gluten free cornbread. Preferably it should be a soft, absorbable one. This recipe is more of a cake-style cornbread recipe, however, you can adjust it to create a more traditional gluten free cornbread for stuffing.

I love the dessert version. I think my hubby’s favorite foods are stuffing and cornbread, and he was in heaven with this gluten free corn bread recipe this morning, and he’s not 100% gluten free! Tri-Tip Roast Recipe with Gluten Free Gravy

I made this tri-tip roast recipe with gluten-free gravy right before I left last week to take care of my father. Now that it’s fall, it’s time for some comfort food, and with Dad terminally ill, I surely needed the comfort. Plus, the tri-tip roast was on sale and I couldn’t pass up the bargain. I like roast because it lasts for more than one meal in our house since it’s just the two of us. And this left my hubby plenty of food in the freezer to tied him over while I was gone.
