Gluten Free Bread Boule

A boule (French for “ball”) comes in different sizes. This petite (French for little) gluten free boule recipe, bakes up high, with a crisp crust, and is doughy inside. Gluten free baking is often more successful in smaller sizes; and this gluten free bread bowl is the perfect example! I’ve been working on perfecting this recipe for years! While on vacation, we ate at one my favorite gluten free menu restaurants, PF Chang’s China Bistro. While this appetizer from their happy hour menu is not gluten free, allow me to explain why it’s not. The waitress spoke to the chef on my behalf. He said that the only reason why they don’t label it gluten free is because it is made on a grill that would pick of cross-contamination from gluten. Their peanut sauce may also contain gluten, but I didn’t ask. The appetizer is called Saigon Summer Rolls, also known as Vietnamese Rolls (Saigon is the former name of the current city, Ho Chi Minh City, in Vietnam.) Gluten Free Blueberry Muffin in a Mug Recipe

While I have a few gluten free cake mug recipes, I had not yet developed a muffin in a mug recipe yet. Wanting a bit healthier version of the cake mug recipe, I decided to add a bit of flax seed meal to the cake recipe and add some blueberries. To make a cake version, substitute the 1 tablespoon of flax seed meal for 1 tablespoon additional flour. This gluten free blueberry mug cake makes a fast snack/dessert!
