Ground Beef Kebabs

Make these delicious meat kebabs with ground beef, chicken, lamb, or pork. In addition, you have array of dipping sauces to choose. Easy, yet flavorful, and your guests will be impressed.

Ground Beef Kebabs

If you're not a lamb lover, you can make lamb kofta kebabs using ground beef, chicken, or pork. They're delicious no matter which meat or poultry you use.

Ingredients:

  • 1 lb. ground beef (15% fat)
  • 1/2 medium yellow onion, finely chopped
  • 1 large clove garlic, minced or grated
  • 1/2-inch square piece ginger, peeled and grated
  • 2 shallots, peeled and minced
  • 1 Tablespoon minced, fresh parsley
  • 1 Tablespoons minced, fresh cilantro (or additional parsley)
  • 1 Tablespoon minced, fresh oregano
  • 1 Tablespoons minced fresh mint
  • 2 teaspoon ground cumin
  • 2 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • Mint Sauce (see recipe here) (optional for lamb)
  • (See step no. 13 for beef sauce)

Instructions:

  1. Soak wooden skewers in warm water for at least 30 minutes.
  2. Add ground beef to a large bowl.
  3. Preheat a skillet with oil. Add onion and saute until translucent, about 8 minutes.
  4. Soak skewers in water and set aside. Preheat grill to high heat.
  5. Top beef with sauteed onion, garlic, ginger, shallots, oregano, mint, cumin, coriander, cinnamon, pepper, and salt.
  6. Add the spice mixture to the beef and knead with your hands until thoroughly combined.
  7. Preheat your gas grill on high with lid closed for 10 minutes.
  8. Form scoops of meat mixture into an oval shape. Thread onto skewers.
  9. Turn off gas on the grill and spray the rack with oil. (Be sure the oil spray is gluten free.)
  10. Lower heat to medium-high. Place kebabs on the grill and cook for about 6 minutes.
  11. Lower heat to medium and cook an additional 6 minutes. (Be sure they are no longer pink in the centers.)
  12. Remove from grill. Transfer to a serving platter and serve immediately.
  13. If using lamb, serve with mint sauce. Mint compliments mint extremely well. Otherwise, for a sweet sauce, combine 2 parts mayonnaise with one part each honey and mustard. Creamy, gluten-free salad dressings also work well. However, as long as your meat contains enough fat, you can serve them without any sauce.

Tips

This is also wonderful served with half Italian sausage pieces.

In a Hurry? You can make these kebabs faster by using ground ginger and garlic powder, but fresh contains more flavor. You can also use dried herbs. Once I completely forgot to add the ginger and they still turned out delicious!
