The old fashion “June Bride” doesn’t exist anymore. Typically, wedding bells are heard from April through October. One of the latest trends is to serve gourmet cake pops instead of wedding cake. They also make an excellent grooms cake. I went to one wedding wear they gave out individual boxed groom cakes as an additional favor. You could something like this withe gluten free cake pops and decorate them more masculine, if desired. Meanwhile, my feminine side got the best of me, and I opted for pink cake pops. Gluten Free White Cake Recipe [Now redirects to Wedding Cake Recipe]

I thoroughly enjoyed creating this gluten free white cake recipe as it is so easy to handle when inverting. It is due its many egg whites, which also makes it moist, along with its butter and sugar. You can use your favorite fillings and frosting from fruit purees to sweetened whipped cream and chocolate ganache to fluffy white frosting, or chunks of fruit within the whipped cream. Gluten Free Angel Food Cake

Gluten Free Angel Food Cake

Cake flour is used in angel food cakes because it contains low protein, which means less gluten. This makes baking a gluten free angel food cake ideal! Because cake flour is a finer texture than regular wheat flour, it is extremely important that you use a superfine gluten free flour for this recipe. I used my Gluten Free All-Purpose Flour Blend, which is made up of superfine white rice flour. You’ll find the link below. I use it in most of my baking recipes. However, I did not use my Gluten Free Cake Flour Blend recipe in this cake, as it contains leaveners such as baking soda and baking powder, which you do not want to add to an angel food cake. Angel food cake uses egg whites as the leavener, and a bit of cream of tartar to stabilize the egg whites and prevent them from drying out.  It contains no fat, making this an ideal dessert for waistline watchers! While I am still working on my gluten free matzo balls recipe, I thought I would share this wonderful gluten free flourless chocolate cake recipe with you all, but especially my Jewish readers. During Passover, it customary not to bake with certain grains. Some refrain from consuming grains altogether. Another custom is once matzo meal touches water it must be cooked within 18 minutes. In addition, yeast is avoided, and some avoid all leavening ingredients such as baking powder and/or baking soda. Gluten Free Graham Cracker Crust with Flax

Instead of relying on commercially made graham crackers, you can whip up this gluten free graham cracker crust all in one step. Adding flax seed meal not only provides additional fiber and nutrition, but it makes this crust moist. The nutritional value is tri-fold: fiber, the same healing ingredient found in aloe vera, and omega 3s. Brown flax seeds are higher than the golden variety, but it’s all up to you which one you use. Gluten Free Lava Cake – Molten Lava Cake

Lava cake is the perfect dessert for 2, especially on Valentine’s Day! It is known by several other names: chocolate lava cake, molten chocolate cake, fondant, chocolate fondant, fondant pudding, chocolate coulant, coulant au chocolat, and chocolate moelleux. This gluten free lava cake is made no differently than its gluten cousin. You only need to ensure that you use gluten free chocolate. For best results use dark or bittersweet chocolate. The best way to melt chocolate is to use real chocolate, versus chocolate chips. My favorite is Scharffen Berger Bittersweet 70% cocoa, the thick 9.7 oz. bar. It’s gluten free. When dusting the ramekins with flour and cocoa, be sure to also use a gluten free “pure” cocoa powder. I like using Rodelle’s Dutch processed cocoa, as it is less bitter than regular unsweetened cooca powder, and darker in color. Meanwhile, I hope you enjoy this decadent recipe. Gluten Free Chocolate Mug Cake (Sugar-Free Dairy-Free Egg-Free)

I’m under deadline on another project but wanted to squeeze in a recent recipe request for a healthier gluten-free mug cake. I chose chocolate this time, as I already have a recipe for a regular Gluten Free Coffee Mug Cake (actual coffee cake). I love coffee mug cake, as they are so easy to make! To make it healthier by using xylitol which is sugar-free, and dairy-free by allowing you to choose the variety of milk. I hope this helps more than just the person who requested it, as it is delicious. I am thinking of substituting some of the all-purpose flour for a little almond flour next time. If you try this idea before I do, please let us all know how it turns out. If you’d like, you can even add some natural peanut butter, or other nut butter, to the top/middle of the batter for a Reese’s Peanut Butter Cup flavor. This cake turned out so well – moist, rich, and chocolaty! Ever wonder what makes German chocolate cake so creamy and moist? It’s the buttermilk, as well as butter and sugar. A gluten free German chocolate cake recipe uses the same exact ingredients as a traditional one, except for the flour, and the brands of certain ingredients. German chocolate is very sweet. I use a mixture of good bittersweet chocolate and cocoa powder instead. In addition, traditionally it is made with 3 layers; this is 4, or you can make just 2 layers (and use less frosting). Golden Gluten Free Dairy Free Cake

With all of the egg yolks I had left over from all of the bread I bake I decided to make a  yellow cake. Using just egg yolks adds much moisture, and creates a deep golden color. This turned out very moist and delicious. I hope all of my dairy-free readers appreciate it, as well as others. You may flavor this cake with lemon rind, orange rind, or almond extract. You may serve it plain, add your favorite icing or frosting, top it with powdered sugar, or drizzle it with chocolate ganache and top it with sliced almonds. A thin, plain icing (several cups of powdered sugar and a couple tablespoons of milk) with an added complimentary flavor such lemon rind, almond extract, etc. will do nicely, as well.
