My grandmother and mother used to make biscotti (Italian cookies), but I never enjoyed them until I made my own, gluten free, of course! These gluten free pumpkin biscotti may be filled with dried fruit and/or nuts, or not. Did I hear, “Amazing”? Why, yes, I did! Use pumpkin puree or pureed sweet potatoes. Either way, they’re delicious! Nuts and dried fruit are optional. You can even dip them in melted chocolate.

I kept craving Ding Dongs. Remember those? They are a small disk-shaped chocolate cake, almost like a cupcake but not as high. They are filled with marshmallow fluff and covered in chocolate? It hit me! Why not use lots of marshmallow fluff? Since my marshmallow fluff basically melts in your mouth, you need much more versus the original Ding Dongs. Voila! This is what I ended up with. This marshmallow fluff gluten-free recipe with a corn free option is a light and fluffy marshmallow cream filling you can use to fill gluten free desserts. While I already have a Marshmallow Creme Frosting/Filling Recipe, I needed something a little stiffer to fill my Gluten Free Mallomars that I recently made. (Recipe to come today.) This worked out perfectly. It is lighter and fluffier than store-bought marshmallows, which allows them to melt in your mouth!
