Gluten Free Pizookie

BJ’s Restaurant Brewhouse makes an incredibly popular dessert called Pizookie, (pizza cookie). See my gluten free pizookie recipe below.) It is a warm, gooey, fresh-baked cookie served in a baking tin, topped with a double scoop of ice cream. You have a choice of several different cookies topped with your choice of ice cream. Most people either have to save room for this decadent dessert or many share it with others because it is such a large portion. Many people go to BJ’s because of this dessert! That’s how good it is!  Be careful, though! It’s so good you may not notice you’ve eaten too much until it’s too late!

UPDATE – August 9, 2011: BJ’s now serves a chocolate chip gluten-free pizookie! Hurray!

Chewy Gluten Free Chocolate Cookies with Chocolate Chips

Chewy Gluten Free Double Chocolate Chip Cookies

I not only broke down and made chewy gluten free chocolate cookies but made them with chocolate chips to boot, for a double chocolate delight! I wanted to duplicate the cookie recipe used in the Pizookies at BJ’s Restaurant Brewhouse. They serve you a warm cookie freshly baked in a large tin topped with 2 scoops of rich chocolate ice cream. They even add a square of Ghirardelli Chocolate. These cookies are to die for! Fortunately, theirs are made with gluten, or I would be sharing one every time I visited there. Due to their calorie content, I would not eat these cookies often, but they are a definite treat for guests and special events. These gluten free chocolate cookies are soft, chewy and rich with chocolate. Add walnuts or more chocolate chips. It’s up to you! Look for Pizookie recipe in tomorrow’s post! Raw Chocolate Ice Cream

Raw Chocolate Ice Cream

I am trying to cut dairy out of my diet a little bit at a time but miss my rich chocolate ice cream recipe. It’s one of my husband’s favorites, too. I have created several almond milk ice cream recipes, but today I incorporated the raw almond milk recipe into this dairy-free, gluten free, raw chocolate ice cream recipe and made it richer and creamier. It is high in protein compared to regular ice cream. You can make this recipe by using almonds or a lower protein version that is nut-free. I knew I had duplicated my dairy version perfectly once I saw the same consistency before it was frozen in the ice cream maker, just like homemade pudding before it sets in the refrigerator! Gluten Free Walnut Butter Cups

Image: Gluten Free Walnut Butter Cups

I wanted to make gluten free peanut butter cups, but I do not eat peanut butter very often and the Trader Joe’s peanut butter my husband uses is made in a factory shared with wheat. So, I opted to create walnut butter cups instead. First, I created a walnut butter recipe sweetened with agave syrup, making a great peanut butter substitute. I share both recipes with you below. Anything chocolate makes my day! How about you? Continue reading “Gluten Free Walnut Butter Cups”

Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)

This chocolate ice cream recipe is just to die for! I double the recipe and make it in my 2 qt. Cuisinart Ice Cream Machine. It is the richest ice cream I have ever tasted! The original recipe I tried earlier had less non-fat milk and more half and half. That was way too rich! Check out my version and it is still super rich and triple chocolate though I have lessened that, as well. Continue reading “Rich Chocolate Ice Cream for Machine (Regular or Dairy Free)”

Chocolate Almond Brittle – English Toffee (Gluten Free)

Gluten Free Chocolate Almond Brittle

Whenever we have company my guests really seem to enjoy my Chocolate Almond Brittle, aka English Toffee. I have a lucite See’s Candy container where I store them and everyone believes them to be See’s Candies, and says they are delicious. I then explain it is not See’s but a homemade recipe. It tastes similar to Almond Roca, but I like it much better. Below I explain how to make it successfully. Continue reading “Chocolate Almond Brittle – English Toffee (Gluten Free)”

Gluten Free Raw Fudge

Gluten Free Raw Fudge

After watching this video recipe on Raspberry Ganache Fudge Cake I have been wanting to try it. Unfortunately, I had no avocado for the frosting, nor raspberries for the filling. Darn! I tried a different spin on things and made a smaller portion of what I really would like to call “guilt-free” raw fudge. This raw fudge makes a great dessert, as well as a snack, and is also low-sodium, low-fat, vegan, gluten-free and dairy-free dessert. And healthy, too! Continue reading “Gluten Free Raw Fudge”

Chocolate Almond Milk Ice Cream Recipe

Chocolate Almond Milk ice Cream Recipe

I adjusted my sinfully rich chocolate ice cream recipe to this much healthier version, even higher in protein, plus tons of fiber, all without the refined sugar and cow’s milk though it does contain eggs. It is still very delicious for such a healthy ice cream recipe. You can make chocolate, raw almond milk ice cream, chocolate raw pecan milk ice cream, chocolate raw hazelnut ice cream, or whichever nut you choose.
