Cheesy Gluten Free Zucchini Green Chile Rice Casserole
Think green cheese enchiladas but instead of using gluten free rice tortillas, you use rice and add zucchini! Plus, rather than loading the casserole with cheese, I made a mornay sauce requiring much less cheese. Simple delicous!

Gluten Free Banana Mug Cake (Nuts & Chocolate Chips Optional)
I believe I have found the secret to making gluten free mug cakes (cakes cooked in the microwave in a mug)! Mug cakes, even when made with gluten can be gummy, or worse, overcooked and dry. Roasted Sweet Potatoes and Kale
Flavored with garlic and thyme, this combination of ingredients is incredible. It will convert any kale hater! The sweetness of the sweet potatoes, caramelized onions, and balsamic vinegar couple with garlic and the spice of pepper, salt, and thyme all hide the fact that you eating kale. They all contribute to the complex flavors. Yet, the ingredients are so basic. Serve this dish warm, at room temperature, or chilled.

Gluten Free Cranberry Blueberry Wild Rice or Stuffing
Just by using a little wild rice, you can add a nutty flavor to your dishes. This gluten free cranberry and/or blueberry wild rice may be used as a side dish or to stuff any bird such as chicken, turkey, and my favorite, cornish game hens. I recently served this as a side dish with chicken breasts. We gobbled it all up. You can also tear up pieces of gluten free rotisserie chicken and toss them in. Yum! This jowar roti recipe (Indian Sorghum Tortillas or Flatbread) recipe is incredibly easy to make, may be made gum-free, and contains no added starch. You may have already tried my similar recipe, Gluten Free Oat Tortillas as well as watched the video. This sorghum recipe only requires one simple change. I know that a few people with celiac disease are also oat intolerant and would appreciate an alternative to the oat tortillas. Now, I have provided you with the exact amounts of water to use.
