One of my Facebook followers requested a recipe for a sweet and sticky chicken kebab / kabob marinade. Honey or sugar and some liquid can create stickiness, but honey or agave is the best. Gluten-free barbecue sauce would also work if that’s all you have on hand. However, honey or honey and mustard are awesome. It’s great due to my tomato allergies. In this recipe, I use lots of black pepper. Depending to whom I am serving it to, I may even add a little gluten free chipotle or hot sauce. Yum! Let me know how you like it. Gluten Free Chocolate Turtles
I love chocolate turtles! I haven’t had one since about 1999. Making these homemade turtles were fun, as this was the first time I made them. There are plenty of different ways to make them. You can use chopped pecans, pecan halves, as well as whole pecans. I used roasted coffee beans for the heads, but you can use pecans. Meanwhile, enjoy these luscious candies or give them as gifts. Gluten Free Holiday Green Beans
While green beans are gluten free, not all brands of bacon are. I’ve been making this bacon and onion green bean casserole during the holidays for decades. It’s my favorite dish that I just can’t live without. My family loves it because I don’t skimp on the bacon. There’s nothing worse than being one of the last ones to dig in and have to dig for bacon. Gluten Free Napa Cabbage Kimchi
Kimchi, also spelled kimchee and gimchi, is a fermented Korean side dish made of cabbage and other vegetables with a number of other ingredients. In traditional preparation, kimchi is fermented in jars underground. There are too many different varieties of kimchi to mention, but I enjoy the napa cabbage version. Napa cabbage is tender and sweet. This recipe is my own mildly spicy version. It reminds me of spicy coleslaw that has rested overnight or a couple of days, you know, when it becomes soft instead of crisp. Kimchi may be eaten fermented or fresh, which is how I use it. Serve this napa cabbage kimchi with rice and Korean pulled pork or strain it and use as a filling with pulled pork in Gluten Free Egg Rolls. (Stay tuned in for my Korean Pulled Pork Recipe.) Gluten Free Chicken Cordon Bleu
I have only had chicken cordon bleu once in my life, a matter of fact, it was when I was still dating my husband, back in the 70s! Making gluten free chicken cordon bleu was a breeze. It’s not much more difficult than breading chicken. However, it’s delicious! My version uses an herb prosciutto mix. However, you can use slices of prosciutto instead, to make it easier, which is the traditional method. I enjoyed the extra herbs, though. Plus I had some leftover from my Pork on Pork recipe. Prosciutto is a popular Italian delicatessen cut of meat used in many popular main dishes such as Chicken Cordon Bleu. Prosciutto is to ham as pancetta is to bacon*, similar, yet different. Waffle Iron Gluten Free Quesadillas & Spicy Dipping Sauce
In my attempt to create more single-serve recipes, I recently tested out my small, inexpensive, ceramic waffle iron to make gluten-free quesadillas. They turned out incredible! They have a slight crispness to the outer shell, which you can control by cooking shorter or longer. The inside contains gooey cheese with chicken, or any other addins you prefer. Gluten Free Beef Gyros
When Chobani sent me coupons for their amazing Greek yogurt, it inspired a few new recipes. To start the ball rolling, I made a Greek cucumber yogurt sauce and used it in these delicoius gluten free beef gyros. Instead of pita, I used my gluten free galric naan recipe (Indian flatbread).
