Gluten Free Bread Bowl Recipe (Boule)

Gluten Free Bread Boule

A boule (French for “ball”) comes in different sizes. This petite (French for little) gluten free boule recipe, bakes up high, with a crisp crust, and is doughy inside. Gluten free baking is often more successful in smaller sizes; and this gluten free bread bowl is the perfect example! I’ve been working on perfecting this recipe for years! I am so excited that I finally achieved a gluten-like texture in a bread bowl. Some of the ingredients were inspired by Schar’s gluten free baguettes. Enjoy! Gluten Free Saigon Summer Rolls – Vietnamese Rolls with Peanut Sauce

Gluten Free Saigon Summer Rolls

While on vacation, we ate at one my favorite gluten free menu restaurants, PF Chang’s China Bistro. While this appetizer from their happy hour menu is not gluten free, allow me to explain why it’s not. The waitress spoke to the chef on my behalf. He said that the only reason why they don’t label it gluten free is because it is made on a grill that would pick of cross-contamination from gluten. Their peanut sauce may also contain gluten, but I didn’t ask. The appetizer is called Saigon Summer Rolls, also known as Vietnamese Rolls (Saigon is the former name of the current city, Ho Chi Minh City, in Vietnam.) Spicy Carrot Salad

Raw Spicy Carrot Salad`

Remember the old classic carrot and raisin salad? Well, this spicy carrot salad replaced that in our house a few years ago. The older we get, the spicier we enjoy our food. If you enjoy a little spice to your food, this is a must try. I like to keep some in the frig to use when I don’t have time to make a vegetable, usually weeknights. I hope you enjoy it as much as we have. Continue reading “Spicy Carrot Salad”

Gluten Free Lemon and Coconut Shortbread Cookies

Gluteln Free Lemon & Coconut Shortbread Cookies

There’s nothing like a good shortbread cookie with a cup of tea. We used to devour one of my former client’s gluten free lemon shortbread cookies (Simply Shari’s), but I can’t have them anymore because they contain tapioca and citrus. My husband still enjoys them, though. Meanwhile, since my flour blend recipe calls for tapioca or cornstarch, I can make my own shortbread cookies. My hubby misses lemon desserts since I realized I was allergic to it. So, I’m trying to make enough to freeze for him to enjoy!. I hope you enjoy them as well.

To make a cake version, substitute the 1 tablespoon of flax seed meal for 1 tablespoon additional flour. This gluten free blueberry mug cake makes a fast snack/dessert! Peach and Mozzarella Gluten Free Pasta Salad & Peach Vinaigrette

Peach and Cheese Gluten Free Pasta Salad

Summer heat already gotcha down? Try a refreshing salad instead of hot meal. Many people have trouble making gluten free pasta salad in advance. Rice pasta gets hard when refrigerated overnight. There are a couple of tricks to get you to succeed, though. Don’t use rice pasta. Try pasta made from other grains such as corn, quinoa, etc. If you must buy one that contains rice, at least make sure it is a mixture of other grains, too. Then, prior to refrigerating, add dressing, or at least oil, to the pasta to keep it soft. Keep in mind that gluten free pasta absorbs liquid quickly. Enjoy!
