Gluten Free Vegan Oatmeal Cookies

Nature’s Path just came out with three flavors of their new Qi’a™ Superfoods Hot Oatmeal. Flavors include Creamy Coconut, Superseeds & Grains and Cinnamon Pumpkin Seed. I love the Superseeds & Grains because it has a bit of crunch. It contains rolled oats instead of quick-cooking oats like so many brands. They asked me to create a recipe using my favorite flavor for their Pinterest Oatmeal Month (January) contest and here it is, a gluten free vegan oatmeal raisin cookies. They are so good that when I made them (just before dinner), I ate three and couldn’t eat my dinner. It was one of those nights…eat dessert for dinner and a small dinner for dessert. Mind you, I am not on a dairy-free or vegan diet, yet they still met my requirements for a chewy cookie. Enjoy!

If you wish to impress your guests, flambe a dessert. Bananas Foster may be served flambe-style, though it is not necessary. If you’ve never had Bananas Foster, now is your chance. It is extremely delicious and easy to make. The caramel sauce is simply made with butter, brown sugar, and a couple of alcohols. Traditionally served over vanilla ice cream, enjoy this gluten free bananas foster over bread pudding, waffles, French toast, in crepes, and my favorite, wait for it…over cheesecake. You can also serve the caramelized bananas alone with just the sauce. To die for! If you do not light the alcohol or cook it off, you’ll feel as if you had a cocktail or two! – Just warning you. Homemade Gluten Free Banana Liqueur

Gluten Free Banana Liqueur

An incredible gluten free banana liqueur recipe that will knock your socks off because it is so easy to make and is so delicious!

Servings 2 cups (16 fluid ounces)

Ingredients

For the Liqueur:

  • 2 small ripe bananas peeled, sliced and roughly chopped
  • 1-1/3 cups light rum
  • 1 cup simple syrup see below

For the Simple Syrup:

  • Simple Syrup Recipe See above link

Instructions

  1. Place the banana in a glass jar, add rum, screw the lid on tightly, and shake. Allow mixture to rest for 4 days, shaking about once a day. (Don't worry if you forget a day or two. Don't worry if it looks brown.)
  2. Any day prior to day 4, make the simple syrup and heat to about 205°F or until a light syrup forms, similar to the syrup in canned fruit. Refrigerate until chilled. (Make the entire recipe. It's great to have on hand for making cocktails ,creating moisture in other recipes, and basting cake layers to soften crust or edges.)
  3. Pour the chilled simple syrup into the banana mixture, cover, and shake to combine.
  4. On day 4 or 5 strain the mixture using a fine mesh strainer. Discard the banana pieces.
  5. Line the strainer with 6 - 8 layers of cheesecloth. Strain the mixture again. (It will no longer be cloudy.) Store in the refrigerator 2 to 3 months. Shake before pouring. Use in a classic bananas foster recipe or serve as a dessert liqueur.
  6. Store in an air-tight container in the refrigerator. While I do not advise it, I kept mine for as long as 2 years in the refrigerator and it was still delicious, though a little brown in color.

Tips

*Some makers of rum age it in barrels that were previously used to age whiskey. If you are extremely sensitive to gluten (cannot tolerate the allowed less than 20 parts per million), you should avoid such brands of rum. Check with each manufacturer.

I used overly ripe bananas and it still turned out very well. If your bananas are brown, the color of the liqueur may be a little darker/tanish yellow.

This gluten-free dairy-free mashed potatoes recipe is not only easy to make but is delicious; and is made completely allergen-free. They are made without dairy, casein, soy, nuts, or any of the eight major allergens. Instead of peeling the potatoes and cubing them, you boil them whole and the peel just slides off. Mild Gluten Free Sweet Chili Sauce Recipe

Sweet chili sauce is a Thai favorite. You can purchase this sauce in bottles. One brand that is gluten free is Thai Kitchen Sweet Chili Sauce. If you’re allergic to tapioca, choose another gluten free brand or make this recipe. It’s easy to make it at home, though; and can be stored for a very long time. (Though it begins to loose its heat after a month or so.) While ginger is not a common ingredient in sweet chili sauce, I provide it as an option in my recipe. Lately, I use fresh ginger in almost all of my Asian dishes. Use this sauce in dips, dipping sauces, and my favorite, Asian Chicken Lettuce Wraps/Cups. I think I’ll start using this as my go-to dip for my Gluten Free Potsticker Recipe. Since it contains no oil, it is low in fat and calories (not carbs). For added calories, use a little salad oil or my new Gluten Free Chili Oil Recipe. Grain-Free Gluten-Free Black Bean Brownies (Allergen-Free)

Gluten Free Black Bean Brownies

Bean flours create higher risen baked goods, but many of the flours create a bitter flavor. One way of getting around this is by using cooked beans. I prefer to use refried black beans. They’re so creamy and not bitter at all. The dark color is perfect for chocolate dishes such as this gluten free brownie recipe. It is dairy-free, gum-free, and grain-free, techinically, as buckwheat is a seed, not a grain. Some refer to buckwheat as pseudograin.
