‘Tis the season for everything eggnog, pumpkin, peppermint and gingerbread. This gluten free granola recipe is no different, as it is gingerbread flavored. Nature’s Path makes one where for everyone sold, they done one to a food shelter. However, unfortunately, it’s not gluten free. Once I saw it, I just had to create my own recipe. I used most of the ingredients they use, accept I used “gluten free” oats, added tons of nuts, some brown flax seed meal (it has more omega’s than golden flax seeds), agave and honey. I didn’t have any crystallized ginger, but omitted the rice starch intentionally. Because it contains evaporated cane juice sugar, it turns out crispier than the Gluten Free Granola Recipe I usually make. A surprisingly addictive gluten free dump cake recipe made with canned cherry pie filling and canned pineapple. A dump cake is an easy recipe where you literally dump the ingredients into a baking dish and bake it. Using a cake mix is the usual method. While you can use Betty Crocker’s Gluten Free Yellow Cake Mix in this recipe, it is so much better when you use my self-rising gluten free cake flour blend recipe and sugar. I am not a fan of cherry, but combined with pineapple, the flavor is pretty incredible. I couldn’t stop eating it. I felt so guilty afterwards. If you are watching your carb intake, using almond flour is a great way to cut back in addition to adding flavor. This gluten free tart crust is the perfect compliment to sweet or savory fillings. Avoid starch-filled crusts. Try using almond flour instead. This recipe is also egg- and gum-free. It’s delicious. I use it to make my Gluten Free Apple Almond Custard Tart and my creamy potato, onion and bacon tart.

Gluten Free Chicken Adobo

Chicken Adobo Egg Rolls

I was watching the Today Show and saw a segment on adobo chicken. Adobo is a Filipino method of cooking food in vinegar and soy sauce. I have had adobo chicken before and enjoyed it; therefore, it sounded wonderful. This is my version of gluten free adobo chicken which is closer to teriyaki chicken since it contains ginger. It may be cooked on the stovetop or in a crockpot. Enjoy!
