I recently roasted acorn squash. I served about half of one of the squash as is. It was delicious! Then I made this soup with the rest. The flavors of Pamesan and garlic made this soup superb. This roasted acorn squash soup is truly scrumptious with all its creamy goodness. Continue reading “Gluten Free Roasted Acorn Squash Soup”
Gluten Free Pumpkin Mac ‘n’ Cheese with Optional Bacon
Similar to it’s baked cousin, this gluten-free macaroni and cheese recipe contains a bit of both pumpkin and cheese, but is made without egg. The pumpkin provides accents of fall and a bit of sweetness. The leeks or onions are used as a substitute to add sweetness and savoriness. Best of all, the optional bacon makes everything taste even better. No matter how you choose to make this dish, everyone will be begging for more. Gluten Free Paleo Peach Crumble
Sometimes there is confusion between crumbles, crisps and cobblers. They all contain a fruit filling topped with various ingredients. A crumble and a crisp have a crunchy topping. A crisp contains oats, where a crumble does not. A cobbler is topped with dough, much like biscuit dough. If you’re not paleo, you can add some certified gluten free oats and you’ll have yourself a gluten free peach crisp. Enjoy this gluten free paleo peach crumble! Gluten Free Grilled or Deep Fried PB&J
While watching Rachael Ray last week, I heard that Tavern On Third, a sports bar in New York, serves a deep fried peanut butter and jelly sandwich. It’s one of the specials during sports games. However, it’s not gluten free. They did not share their recipe, but I got right on it and created a gluten free version for you.

Gluten Free Panko Bread Crumbs – Breadcrumbs
Panko breadcrumbs are Japanese-style bread crumbs made from the dough of bread without crust. As you can see in the below photo, panko is white, not toasted crumbs. I throw some gluten free panko crumbs into the batter I use for my Gluten Free Tempura recipe as it adds texture. I have used many of my gluten free bread recipes to make panko, but none of them have been as crispy as when I use Schar rolls. Check out this super simple recipe. Orangecello Liqueur Recipe
Orangecello is an Italian delight. Serve it over ice, mix it with wine or champagne and serve as a spritzer, or add it your favorite cocktail. Make homemade orangecello with little effort. Cent’anni! (This is an Italian toast literally meaning “100 years” – wishing you to live 100 years.) Continue reading “Orangecello Liqueur Recipe”
Gluten Free Beef Stew in Red Wine Sauce
I made a large pot of this gluten free beef stew last night. It was so delicious! I used an inexpensive wine, not one I would drink, though that is not suggested by the pros. I froze a bunch for my husband to take on his out of town trips and for unexpected guests. I’m not big on potatoes in my stew, so I only used a few for my hubby to enjoy. You can add more if you desire. I like my beef stew served over rice. There is no need to add Gravy Master or Kitchen Bouquet as the wine naturally creates a dark gravy. Enjoy! Gluten Free Tortilla Soup with Chicken
I have never made tortilla soup before now, but this was absolutely delicious, per my recent guests. It’s unfortunate that I cannot have tomatoes, but my hubby is always willing to be my taste-tester. Enjoy this gluten free tortilla soup recipe along with other Gluten Free Mexican Recipes. Gluten Free Baked Macaroni and Cheese Italian-Style (Baked Ziti)
This gluten free baked macaroni and cheese is basically a ziti recipe, but I can’t find any gluten free ziti pasta (straight tubular noodles, usually with grooved lines). So, I just renamed it, especially for those who are not familiar with Italian food. This is my go to recipe for unexpected guests. Sometimes I serve it the first day that my holiday guests arrive, as well. I’m usually too busy and exhausted to cook after cleaning the house and making sure everything is perfect. For guests, I use my Authentic Spaghetti Sauce Recipe which contains beef stew meat and Italian sausage. I always keeps some in the freezer. The dish in the photo below contains marinara sauce (tomato-based sauce without meat). I either make plain macaroni and cheese for myself, in a separate dish or add some pureed red bell pepper sauce since I am allergic to tomatoes. I hope you enjoy this recipe as much as my guests have. Continue reading “Gluten Free Baked Macaroni and Cheese Italian-Style (Baked Ziti)”
