Summer time or winter time, a room temperature salad is perfect. I normally would have began experimenting with light flours. However, for containing many heavier grain flours, this bread turned out amazing. Flaky Gluten Free Croissants
I put off developing a recipe for gluten free croissants for way too long. After multiple requests, here it is! I used my new gluten free phyllo dough recipe. Though it calls for superfine rice flour, I will be experimenting in the future with non superfine gluten free flours. I baked them after my husband went to bed one night and left 5 out, loosely covered. with a note stating to have as many as he’d like. I made them with tapioca flour/starch, which I am allergic to. (I had a couple anyways. Oh my!) When I woke up the next morning they were all gone. That night be kept raving them about them. I have never heard him enjoy anything, gluten free, more than these. No-Bake Gluten Free Cheesecake and Crust (Dairy-Free Options)
I know you’re busy. We all are. So, not only can you take a break from complicated recipes, but a no bake one, too. This no bake gluten free cheesecake uses Pamela’s Products cookies in the crust. Though I have listed their Extreme Chocolate Mini Cookies, you can use any flavor you desire. You can spice it up with ginger snaps, chocolate chip or, chocolate chocolate chip. Get creative!

Quick Gluten Free Paella (Without Seafood or Chorizo)
Any paella, including gluten free paella, usually contains chicken along with seafood and chorizo, however, I don’t care for seafood or the gristle in chorizo. I can only find the lower quality chorizo that contains gristle. Therefore, I skipped the seafood and substitute bacon bits for chorizo. To speed things up, I use instant rice in this paella recipe, but you can use regular, short grain rice. Just cook the paella with enough broth to substitute the amount water you would normally use to cook the rice. I didn’t have any saffron, so I skipped it as well. It turned out delicious! I even caught my husband taking a spoonful on his way to place his plate in the sink after our meal was complete. I told him that is one the highest forms of complements he could pay me. Grilled Brisket with Marinated Beef (Gluten Free)
The brisket cut of cattle is one of the prime cuts even though it contains quite a bit of muscle/connective tissue. When cooked properly, it can become very tender. Marinating is one way to tenderize such cuts, as well as slow cooking. Put them both together and you have one fine cut of meat. Adding your favorite dry rub is one way of creating flavor, but it does not help tenderize the meat, acid ingredients do. This recipe provides a marinade as well as instructions on how to slow cook a beef brisket on your grill or barbecue. Homemade Sweet Potato Chips (Naturally Gluten Free)
With summertime approaching, and our already warm weather, I am picturing backyard barbecues and picnics on the horizon. What better way to celebrate than with a healthier snack. Rather than reaching for processed potato chips, or expensive natural ones, you can make your own right at home. The great thing about homemade sweet potato chips is that they are lower in carbohydrates compared to regular chips. When making them at home you can use a healthier oil, as well.
