Easy Gluten Free Caramel Fudge Recipe (Corn-Free)
This is a very old fashioned caramel fudge recipe that has been passed around a lot, but I have made it much easier to make. Strawberry Rhubarb Dessert Soup (Naturally Gluten Free)
Decades ago, rhubarb was considered a vegetable. It actually is, but in 1947 it was reclassified as a fruit because that’s what people used it as. No matter the classification, rhubarb complements desserts well as its tartness balances out sweet flavors. This strawberry rhubarb dessert not only makes for a cooling summer treat, but a healthy one. Rhubarb contains Vitamin C, A and potassium. Potassium is a great way to fight the summer’s heat. It definitely adds a splash of color to the table and it’s fairly easy to make. I like it because it’s naturally gluten free. Enjoy! Gluten Free Bread Recipe with Toasted Hemp and Sesame Seeds
One of my regular readers was looking for a soft gluten free bread recipe that had an interesting flavor. I love a nutty flavor and the use of teff flour definitely fits that flavor profile. However, I didn’t stop there. I added some toasted hemp seeds along with sesame seeds. The nutty flavors compliment the sweetness of the honey quite well.

Lower-Fat Gluten Free Coleslaw
Memorial Day is coming up soon, and classic dishes like coleslaw are often served. Whether you are having a barbecue, a picnic, or just eating in, this gluten free coleslaw recipe will fit the menu well. It is lower in fat than most coleslaw recipes as I use a bit of fat-free/non-fat Greek yogurt to substitute some of the mayonnaise. If you are on a dairy-free diet, feel free to use plain dairy-free yogurt. For others not needing a low-fat recipe, use all mayonnaise. Roasted Butternut Squash
In preparation for my upcoming butternut squash ravioli recipe I wanted to share my new roasted butternut squash recipe with you. Of course, once I create the ravioli recipe, I will link to this recipe. It is naturally gluten free, does not contain any allergens, and is very yummy! If plan on pureeing this for any reason, consider using a portion of butternut squash and and a portion of sweet potatoes. It makes it thicker and creamier without the use of cream or cheese. Mocha Frosting – or Coffee (Naturally Gluten Free)
In earlier years I was never a fan of buttercream frosting. However with age we our taste buds change. Actually, I believe we lose some. Since I have experimented with different flavors of frosting, I have come to appreciate them. This mocha frosting is one of my new favorites, especially on a rich chocolate cake. You can easily adjust the recipe to make coffee frosting with the tips provided. The key to a good buttercream frosting is how long you beat it. You want it to be airy and light, similar to mousse. Lemon Panna Cotta (Egg-Free Custard) with Bourbon Sauce (Gluten-Free)
Lemon panna cotta is an Italian, egg-free custard. Panna cotta can be made in several different flavors with an array of sauces. It is often served with biscotti, an Italian biscuit-cookie. You will find this particular recipe to include your choice of plain bourbon sauce or walnut bourbon sauce. I’ve included the recipe for the garnish, candied lemon peel, as well. I hope you enjoy this recipe. It appears to be a lot of work, but if you use plain lemon peel for garnish, it’s done in a snap. Gluten Free Osso Buco in a White Wine Sauce
Osso buco (also known as ossobuco) is my father’s favorite dish. He orders it whenever he sees it on a menu. It is an Italian recipe and when translated mean “hole of bone”. This is due to its succulent bone marrow. Perhaps this does not sound appealing, but you will have to taste it to appreciate it. The rich flavor of the marrow is what creates its rich sauce. Though you will find osso buco recipes that call for red wine, I chose to use white as it is traditional. If you desire an old school version add a bit of cinnamon. Many assume the tomato based sauce is traditional, but it is actually a modern version. Served over polenta or mashed potatoes and topped with gremolada (parsley, lemon juice, and garlic), this gluten free osso buco is a beautiful dish. (See vegan version in the Tips section below).
