There are all sorts of possible add-ins to this gluten free risotto recipe. However, if you wish to make a simple addition, simply adding a bit of grated parmesan/romano cheese will do the trick. I have served this rice with roast and green beans; and then used it in a ground beef casserole the following day. I added left over veggies, creating a very flavorful casserole. I really had to dig deep in the memory banks for this baked chicken thighs recipe, and I’m so glad that I did. It was delicious! I haven’t made it in years, and I came to realize there really isn’t much to this recipe at all. I was at my Dad’s last week and though he has limited gluten free ingredients and supplies, I am usually able to whip up most basic recipes. This really is an easy gluten free recipe. If you’d like to make it lower in calorie, substitute some of the butter or buttery spread for a bit of gluten-free chicken broth. Enjoy! Dad did!

Gluten Free Brown Rice Pasta Recipe

Homemade Brown Rice Pasta

I am in love! This gluten free brown rice pasta recipe is heaven on a plate! And it is so easy to make! I have made flat pasta (linguine-style) and ravioli pasta with this recipe and it works – without any starch at all! And because I used superfine brown rice flour, it did not have any grittiness at all. I had hunted all over the web for a brown rice pasta recipe that did not include potato, tapioca or corn starch or flour, but had no luck. I wanted a healthy, gluten free brown rice pasta recipe. The brown rice pasta recipes used by most manufacturers do not include starch, just brown rice flour and water. So, to the drawing board I went and came up with a recipe that contains a bit of guar gum, which is corn-free, and I added just a bit of oil to make it easier for pushing through a pasta maker. I used my pasta attachment for my KitchenAid mixer. Of course, the oil is not necessary if you’re going to roll it by hand, but a little flavor and the lack of stickiness is well worth it. This recipe is not only gluten-free, but also egg-free.

Update: I finally got around to experimenting with this recipe. I did not want to add a bunch of starch to it to make it have a good texture, like my Gluten Free Egg Noodle Recipe. Red Beans and Ham

New Orleans Southern Red Beans and Rice

When I was young, my mother used to make red beans and ham (known as red beans and rice), which is naturally gluten-free. It must have been the southerner in her. I have finally succeeded in recreating her original recipe, with the addition of a bit of ground thyme. Compared to my earlier attempts, this time I added more onion and garlic. Gluten Free Pork Tenderloin

Whether cooking for a small group or a large crowd, gluten free pork tenderloin is an easy, yet elegant main course. I chose to cook two pork tenderloins, one 2.75 pounds, and the other 2.65 pounds. A half pound per person is sufficient, and will most likely yield some left overs. This gluten free pork tenderloin recipe is no different than any other pork tenderloin recipe, other than gluten free starch was used to thicken the gravy. Gluten Free Cream of Chicken Soup Recipe

This gluten free cream of chicken soup recipe is made with fresh ingredients. Add to other soups for an easily digestible protein. Using chicken breasts is not recommended, as it is too dry and creates a gritty texture. Brown chicken parts add more flavor. Ensure that the chicken broth you use is gluten free, or use the broth/water used to boil the chicken, though it will not have as much flavor as pre-made chicken broth. Gluten Free Low Fat Cream of Broccoli Soup

Cream of Broccoli Soup - Gluten Free

I usually make this low fat cream of broccoli soup by only using chicken broth, and sometimes even make it lower in fat by substituting some of the broth with water. However, this time I added some milk and a splash of whipping cream to make this higher in calorie for my father who is on a high caloric diet. I have added both low fat and high calorie variations in the recipe below. Lucky for me it’s easily made gluten free. I hope you enjoy this low fat cream of broccoli soup recipe, or the rich version. Gluten Free Basil Cream Sauce

This basil cream sauce recipe is lower in fat than those made with whipping cream or evaporated milk. Yet it was so yummy on my ravioli. Basil cream sauce is naturally gluten free, however, if using a commercially grated cheese, you’ll need to ensure that is is gluten free. Make it dairy free by using milk and cheese substitutes. Gluten Free Appetizer: Honey Chicken Wrapped in Bacon

This gluten free appetizer was a huge hit in our house! So yummy! They disappeared before they had a chance to cool off. The chicken remains moist and the bacon is crisp. Savor the slight smokiness of paprika and sweetness of honey. I couldn’t ask for a better appetizer. This makes a great gluten free appetizer for any guest (on a gluten free diet or not), or for any special occasion. Any day could count. Right?

Chestnut Cinnamon Gluten Free Pancakes (Dairy Free and Egg Free)

I needed to create a recipe to use up some aging flours. I thought, “Why not a gluten free pancake recipe?” There must be thousands of variation of pancakes, but I chose one I thought was unique, in that it did not contain any eggs or gum. That did not work out very well, therefore I adapted it. The recipe originated from one of Nutsonline’s Gluten Free Pancakes recipes. They were delish and I feel that they are a bit more healthy than a typical recipe. These were delish, and are dairy-free and egg-free! Enjoy!
