The healthiest way to consume carbs is through vegetables and fruit. This sweet potato carrot apple soup is a perfect and delicious example. Plus, it will keep you warm on cold winter days. Continue reading “Gluten Free Carrot Apple Soup”
Apple & Beet Juice Jelly Recipe
During The Great Depression, a beet juice jelly recipe was something people turned to save money. It was inexpensive to make versus using fresh fruit. I’ve been on this beet kick, whether I steam fresh beets or use canned. Canned beets contain about 1/2 cup of juice ready to use in this recipe. I save it up to make beet juice jelly, or in this case, apple beet juice jelly. Today, beets and its juices are consumed for multiple health benefits from fighting inflammation to cancer. I use a combination of apple cider and xylitol (a sugar substitute) to sweeten it, making it almost guilt free. Then add your favorite extract to create a unique flavor. The texture is perfect, not stiff like jello. Continue reading “Apple & Beet Juice Jelly Recipe”
Stevia Sweetened Homemade Almond Milk Recipe
Up to a few years ago, I was making a homemade almond milk recipe created by Ani Phyo, date sweetened almond milk. However, due to its high carbohydrate content, I switched to unsweetened. Recently, I began adding a bit of stevia to the recipe. I finally found a brand that isn’t bitter, NOW Better Stevia. Now my almond milk is perfect!
Update: I also enjoy using Trader Joe’s Liquid Organic Stevia. Continue reading “Stevia Sweetened Homemade Almond Milk Recipe”

Gluten Free Vegan Granola Recipe
Nature’s Path sent me a couple of boxes of their new Qi’a Hot Oatmeal in Creamy Coconut flavor. I don’t usually enjoy coconut in my oatmeal; therefore, I had to find another use for it. I love coconut in granola and used it for that. I also usually use plenty of superfoods in my granola. This was so easy to make because Qi’a Hot Oatmeal already contains many of them. This was my first experiment making vegan granola, though, as many vegans do not consume honey. I enjoyed it and hope you do, as well. Continue reading “Gluten Free Vegan Granola Recipe”
Gluten Free Bananas Foster
If you wish to impress your guests, flambe a dessert. Bananas Foster may be served flambe-style, though it is not necessary. If you’ve never had Bananas Foster, now is your chance. It is extremely delicious and easy to make. The caramel sauce is simply made with butter, brown sugar, and a couple of alcohols. Traditionally served over vanilla ice cream, enjoy this gluten free bananas foster over bread pudding, waffles, French toast, in crepes, and my favorite, wait for it…over cheesecake. You can also serve the caramelized bananas alone with just the sauce. To die for! If you do not light the alcohol or cook it off, you’ll feel as if you had a cocktail or two! – Just warning you. Carla’s Gluten Free Shepherd’s Pie (Tomato-Free Allergen-Free)
Since I’m allergic to tomatoes, this gluten free shepherd’s pie recipe is tomato-free. In addition, it calls for a dairy-free mashed potato recipe and is also allergen-free. While shepherds pie (aka Cottage Pie in Britain) is a delicious meal any day, because it is Irish, it makes a perfect St. Patrick’s Day meal. Grain-Free Gluten-Free Black Bean Brownies (Allergen-Free)
Bean flours create higher risen baked goods, but many of the flours create a bitter flavor. One way of getting around this is by using cooked beans. I prefer to use refried black beans. They’re so creamy and not bitter at all. The dark color is perfect for chocolate dishes such as this gluten free brownie recipe. It is dairy-free, gum-free, and grain-free, techinically, as buckwheat is a seed, not a grain. Some refer to buckwheat as pseudograin.
