Colorful Gluten Free Quinoa Salad
I’m not one big on quinoa salad, as I usually enjoy my food either cold or hot. And most of the gluten free quinoa salad recipes I’ve tried are not flavorful enough for me. I finally got this recipe right, though. The pineapple really makes this dish flavorful, so much that I didn’t even need a dressing. You can always top it with lemon, though, for even more flavor, or even your favorite salad dressing. In addition, if you replace the corn with other vegetables, you can makes this dish not only gluten free, but corn-free and grain-free. Baked Gluten Free Sweet Potato Fries
This month, Joy Bauer’s recipe contribution comes from her Celiac Disease Recipes Collection. Low in fat and sodium, this gluten free sweet potato fries recipe is absolutely delicious without a thing added to them besides a little olive oil cooking spray. Gluten Free Bars – Apple Walnut (Sugar-Free)
I decided to create my own gluten free snack bars with healthier choices of gluten free flours, and free of many allergens. Though the bar is heavy due its content, you can definitely make them more cake-like with lighter weight flours such as rice, sorghum, millet, etc. Just adjust the baking time as needed. Grain Free Gluten Free Applesauce Cake
Baking gluten free isn’t always easy, but if you’re also on a grain free diet, choices are more limited. This gluten free applesauce cake recipe is moist, can be made with or without starch (see tips for all almond meal without starch), and does not call for any gums, butter or oil. It is a one-layer cake, about 1″ high and about the weight of banana bread, though tossing in an additional egg will make it lighter. Some cakes may not necessarily need a springform pan, but because of this cake’s weight, I highly suggest using one, as to not break it when removing it from the pan. Baked Chicken Florentine (Gluten Free)
Are you tired of the same old way you make chicken? Try stuffing your chicken and bake it with this chicken florentine recipe. It’s so easy! – and bakes in about 30-45 minutes, depending upon the size of the chicken breasts. I love this dish, as I serve it without any starches (rice or potatoes), just a salad, and we still cannot finish an entire breast. Great for low-carb and grain-free dieters! Creamy Split Pea Soup with Fresh Sugar Snap Peas
My father is visiting again, and he just loves his soups! Split pea soup is one of his faves, but knowing he is ill I just had to add some fresh nutritional content. So, I not only made a split pea soup, but with added fresh sugar snap peas. Being Italian he loves the flavor of basil, so I added a bit of that as well.
