Gluten Free Puff Pastry Dough – Small Batch for Cake Bases or Pastries
If you’re looking for a small batch gluten free puff pastry, this recipe is perfect to use as a base for up to 12-inch round pans or about 4 Danish pastries. When baked in a 9-1/2-inch springform pan, it will shrink about 1-1/2 inches. This small batch recipe is one-quarter of the recipe that you will find here. In addition, I’ve added a new ingredient substitute that will help prevent sogginess in cakes where this pastry is used as a base. This is especially useful for desserts filled with custard. Gluten Free Cream Puff with Streusel (Pâte à Choux)
Pâte à Choux is the French term referring to the easy-to-make dough you use to make cream puffs and eclairs. While you may prefer your pastry filled with whipped cream, I enjoy mine filled with pastry cream (see photo). Use either or both combined or any of the other variations suggested. Meanwhile, streusel and cream puffs is an incredible texture and flavor combination! I bet you can’t eat just one.
