Gluten Free Corn Muffins with Pears and Expandex

One of my family members was recently diagnosed with high blood pressure and requested  a batch of my low-sodium baked goods. Since their favorite fruit is pears I decided on my gluten-free pear corn muffins. Because they are not on a gluten-free diet and not used to heavy gluten-free food, I decided to experiment and add a little bit more tapioca flour (1/3 cup instead of 1/4 cup) and 1/4 cup of Expandex. Expandex also improves shelf life and helps save the texture of gluten-free foods while freezing. Wow!  They really expanded and rose very nicely. In addition, I noticed that muffins made with Expandex had a nice crunchy muffin top, where the prior muffins had a soft top even where brown. Gluten Free Beef Stew Chili

Gluten Free Chili Beef Stew

This gluten free beef stew recipe is actually another one of my gluten free chili recipes without tomatoes, (due to my allergies). Some assume chili is naturally gluten-free, but if you use a package chili mix it may very well contain wheat gluten. This chili recipe is thickened with potato starch, though you may use cornstarch, if that is all you have on hand. You may also add tomatoes to this recipe, if you wish, which will sweeten it up a bit, or you can sweeten it with sugar, agave nectar, stevia or a combination of any of these. It is wonderful over baked french fries, which is how I used it, or you can top it over baked potatoes or rice. It is only a tad spicy, so if you like it hot, spice it up a bit more using additional cumin and chili powder. The worcestershire sauce gives it more a beef stew flavor, therefore, if you desire more a chili flavor, just skip it or add more chili powder. Enjoy! Continue reading “Gluten Free Beef Stew Chili”

Low-Sodium Gluten Free Bread Made with Expandex

Looking for a lighter gluten free bread recipe? The first time I made my gluten-free oat bread recipe I used non-fat milk. This time I used water, less salt, and replaced 1/4 cup of the oat flour with 1/4 cup of Expandex. It has the texture of real white bread, but just slightly heavier because it is moister; has a little heavier crust, and is made with oat flour which is a heavy flour. It makes a wonderful gluten-free sandwich bread! When warm or just cooled it has the texture of white bread. Once it cools completely it has the texture of sliced sourdough bread. Rich Gluten Free Banana Ice Cream

Banana nut ice cream is one of my top 5 favorite ice creams! I created this recipe for my holiday guests and they all enjoyed it very much. My sister, who professes she will not touch a banana, even enjoyed it! Gluten Free Tuna Melt

I have never had a tuna melt before, but decided I could make a gluten-free tuna melt without cheese!  Of course, you can add cheese, if you desire. I wanted to add fish to my diet. I really do not like fish very much. I suppose there is a little child still left in me! I am about to make a meatloaf muffin recipe that calls for Stove Top stuffing mix. Since Stove Top does not make gluten-free stuffing I am making my own homemade seasoned gluten free croutons recipe. You can use these croutons in gluten-free stuffing, as well, with or without the seasonings. I hope you find this recipe useful. My husband who gladly uses gluten croutons, likes these better! Gluten Free Beef Tostadas

Gluten-free Beef Tostada

This is a fairly easy, yet a tasty gluten-free recipe. You can either purchase pre-made gluten-free brown rice tortillas, which I did this time from Trader Joe’s, or you can make your own. I have included the link to my white rice gluten-free tortillas below. If you are cooking for kids you’ll need to adjust the heat by reducing the chili powder and cumin. If you like it real spicy, then by all means add more! This recipe is set at a medium heat. Often stewed tomatoes are added to tostadas, but since I found out I am allergic to tomatoes I just add lots of spices and vegetables. Definitely consider adding tomatoes to yours! Quick Gluten Free Phyllo Dough – Gluten Free Filo Dough

This gluten free phyllo dough recipe (or gluten free filo dough) is so easy to make compared to traditional recipes! Fortunately, for those of us on a gluten-free diet, we finally have an advantage in baking without gluten. Gluten is not our friend in attempting to create a flaky crust. Flakiness is what is needed in phyllo dough. This is my first attempt at creating a gluten free phyllo dough recipe. I began with my tart crust recipe and made it more flaky and crispy. Phyllo dough can be used with sweet or savory fillings, such as pastries, croissants, meats or cheese fillings and more. Yum, right? For a filling I used gluten-free custard which I use in my gluten-free cream puffs and for crème brûlée. What will you use for a filling? The crust turned out flakier than any crust I have ever made! I was so pleased. All those interviews with all of those gluten-free experts and chefs really really paid off. Gluten Free Chicken Salad Recipe

I usually prefer chicken breasts, in gluten free chicken salad sandwiches, but I had a little left over dark meat chicken on hand, and because it was dark meat every time I looked at it, it reminded me of turkey. I then began to crave one of my old favorites, turkey, cream cheese and cranberry sauce sandwiches, which I have not had in years. But I usually like to eat a bit lighter than that for lunch, especially with all the appetizers I tested recently. Greek yogurt makes a great low-fat substitute for cream cheese, as well as mayonnaise, in sandwiches. Since I had dried cranberries on hand makes this recipe came close to my old favorite, but I added in a little feta cheese, which wasn’t really noticeable, but added flavor. A little added celery, walnuts and a touch of agave syrup did the trick! Get creative and make your own adjustments to this easy recipe. Perhaps some onion. What will you use?
